To Love and Mourn an Animal – Sentient Media

October 21, 2019

Companion animals affect us in unique ways. They dont judge us. They dont compete with us like other humans. They provide us with emotional support, and in return, we love them dearly.

Reading Time: 4 minutes

Companion animals affect us in unique ways. They dont judge us. They dont compete with us like other humans. They provide us with emotional support, and in return, we love them dearly.

My feline companion of almost twenty years recently died. Silos lived a good, loved life and had a peaceful death at home, with my husband, Patrick, and me there with him. Nevertheless, for some time after Silos death, I felt utterly destroyed. Even though I have many times mourned the death of close grandparents, cousins, and friends, after Siloss death, I sank into depths of despair I have never felt before in my life.

Should I be ashamed to admit this? Should I be embarrassed? Our society would have me think that I should not grieve the death of an animal more than that of a human. Indeed, in my conversations with many patients and non-patients who lost companion animals, I have found that most people have felt pressured to downplay their love for those animals. Although this is gradually changing, too often, instead of giving compassion and empathy, colleagues, friends, and even family members tell those who mourn an animal that they are being silly to care so much after all, they are just animals. Get over it, they say. Buck up!

We laugh together and cry alone. Grief is even lonelier when an animal dies because its less valued than grief over the death of another human. Sociologists, psychologists, and psychiatrists have been slow to appreciate the impact of the loss of an animal. But studies show that an animals death can cause poor sleep, missed days from work, significant distress, and depression. Among those who lose animals they deeply love, the extent of their grief is similar to that of those mourning the death of a cherished person.

It should not come as a surprise that humans are capable of deep affection and love for other animals, be they dogs, cats, or rescued pigs, raccoons, chickens or horses. In the early 1980s, biologist Edward O. Wilson recognized and defined the human innate desire to connect with other living beings as biophilia. It is the hypothesis that humans naturally connect with nature and animals and that our affinity is rooted in our biology. It is a love of life in its simplest definition. It is part of who we are as fellow animals on this planet. Wilson wasnt necessarily arguing that we all seek a bond with animals, but I believe that it is in our relationships with animals where our biophilia is especially evident.

Almost two-thirds of American households include animals as part of their families. And when we cant bring animals into our homes, we look for them elsewhere. We visit wildlife sanctuaries, we join bird watching clubs, we take safaris in Africa, and we watch countless YouTube videos of animals doing things and behaving in ways we thought only humans do. We seek a bond with animals. Our need to be with animals is so deep and instinctively strong that our biology is not just biophilia. It is animalphilia.

We choose to connect with animals. When we encounter another animal, no matter how fleeting that moment may be, we know that we are not alone. And that is comforting.

In fact, how we experience empathy toward animals may not be so different from how we experience it toward other humans. Researchers from the Department of Psychology at Brandeis University and the Pennsylvania State University found that when we are shown pictures of either humans suffering or dogs suffering, there is a great deal of overlap in our neural responses to both.

When we empathize with and connect with animals, we expand our social circle beyond our species. This expansion can lead to remarkable, and often startling, benefits. Studies are showing that animal companionship can reduce our risk of heart disease, increase longevity, lower our cholesterol levels, boost our mental health, and reduce stress. When you walk through your front door at the end of a stressful day and your critter greets you, cant you just feel your blood pressure lowering? Stroking an animal relaxes our autonomic systems, as measured by blood pressure, cortisol, and epinephrine levels, and by respiratory rates and skin temperature.

And heres an important thing to note: Other species arent just substitutes for humans. The social support animals provide is independent of human social support. Animals seem to affect us in unique ways. They dont judge us (except by how kind we are to them). They dont compete with us like other humans and they offer us emotional and psychological release. As a result, animals defuse a lot of the human-generated pressure in our lives. Animals remind us that the world is larger than us. They can teach us to look beyond the racism, poverty, and cruelty in our lives to step out of our daily struggles and see the beauty that surrounds us.

Perhaps its now time to acknowledge freely and openly that loving another animal is a unique and wonderful experience that should never be dismissed as insignificant. The animals in our lives are not mere shadows of human companionship. Animals are individuals in their own right; unique beings who enrich our lives with their friendships. Rather than discounting the innate human bond with other species, we should embrace it for the wonderful gift it is.

Silos gifted Patrick and me daily. He helped us experience the pure joys of just being silly, of feeling unconditional love, and of being completely in the moment. I miss his chasing the laser light around the house. I miss his nightly operas. I miss his drooling when he is kneading my stomach. I miss his yelling at me to get up when I sleep in on weekends. I miss his warm body next to mine when we sleep. I miss him. I miss Silos so deeply; it hurts. And I say this without any shame.

I dont miss my pet. I dont miss my cat. I miss my Silos.

Start-up of the week: charging your car can be done in minutes – Innovation Origins

Your sneak preview of the future is the slogan of Innovation Origins, and thats just what we will highlight with our Start-up of the Week column. Over the past few days, five start-ups of the day have been featured and on Saturday we will choose the weeks winner.

Innovation Origins presents a Start-up of the Day each weekday

We shall consider various issues such as sustainability, developmental phase, practical application, simplicity, originality and to what extent they are in line with theSustainable Development Goals of UNESCO. They will all pass by here and at the end of the week, the Start-Up of the Week will be announced.

Moreover, our weekly winners may be awarded another prize. Because at the end of each calendar month, our readers, together with the editors of IO, will select the Start-up of the Month!

The way we use medicines is still somewhat primitive. Maybe thats not surprising, because our options are limited when it comes to taking medication. Most organs are well protected from the outside world. Nevertheless, this also means that medicines cannot be administered very effectively. Dosages are therefore often higher than necessary because they have to travel a long way through our bodies.

Sovigo wants to change this through nanotechnology. Their capsules are about 100 nanometres in size, which is 10,000th of a millimeter (!) The main advantage is that this nanomedicine is effective solely at the point where the medication is actually needed. Preliminary results are encouraging for treating intestinal disorders.

Climate change and dwindling agricultural land are major challenges for food and feed production. The supply of animal protein is particularly problematic.

The start-up Blue Planet Ecosystems, based in San Francisco and Vienna, wants to shift pisciculture (fish farming) to computerized container systems. The ecosystem is to be simulated in such a way that nature is able to grow in self-sustaining LARA systems (Land-based Automated Recirculating Aquaculture).

Lara Systeme (c) Blue Planet Ecosystems

This German start-ups drone system has brought a new automation revolution to warehouses. The flying assistants are able to make an inventory of a warehouse on their own by making a kind of digital impression of it. At present, maintaining a warehouse is a time-consuming task. Doks. Innovation promises a time gain of no less than 90% and a cost reduction of 80%. Data collected by the drones are subsequently made available in a proprietary data analysis system. Similar concepts are focused on a single management system as a rule, whereas Doks offers a universal system.

Giving freedom back to people who have limited freedom of movement. Thats the noble goal that former snowboarder Patrick Mayer has committed himself to. Mayer ended up in a wheelchair for a long time himself and personally experienced how winter can throw a spanner in the works. Moving through snow and over ice in a wheelchair or with crutches is just not much fun.

Which is why he came up with Wheelblades, a kind of mini-snowboard that gives more stability to the front wheels. For people on crutches, there is the SafetyFoot, an extra foothold for underneath crutches. And Wheelblades are also suitable for prams, so that you are able to go on a winter hike with your little one without any hassles.

Recharging: it is perhaps the greatest sore point that is associated with electric mobility. Compared to traditional refueling, it takes ages before you can get back on the road. If its up to the Israeli start-up Chakratec, this will soon be a thing of the past. Their kinetic battery fills up about as fast as your diesel tank does. Yet the potential is even greater: the battery has unlimited charging cycles and contains no pollutants.

They are setting their sights on a heroic reputation. A start-up for the benefit of humankind. What makes this mission even more challenging, is that the market in which they have delved into is dominated by Chinese companies. How do you stand out? The solution is simple and difficult at the same time. Come up with something completely new. The result is a kinetic battery with flywheel technology.

A battery can be highly innovative; but without a good charger it is of little use. Chakratec maintains that current infrastructure has been overwhelmed by reality and is suffering from too much red tape. It would be possible to create fast charging stations anywhere, even with a weak network, with the relevant fast charging technology.

The potential of Chakratecs technology has not gone unnoticed. The start-up has already won several awards, including one for best storage technology. They can add another feather in their cap because the favorable prospects for Chakratec make it the Start-up of the Week!

There is a frantic search going on around the world for efficient and sustainable batteries and the subject is also regularly addressed by Innovation Origins. At the beginning of this month, for example, we spoke to the start-up High Performance Battery, which is also trying to bring a new type of smartphone battery onto the market. Or does the future for cars lie with hydrogen technology? We sought answers to that question here in this series.

Innovation Origins is an independent news platform, which has an unconventional revenue model. We are sponsored by companies that support our mission: spreading the story of innovation. Read more here.

The Right Chemistry: Looking for the secrets to longevity – Montreal Gazette

We cant avoid aging. Every passing minute brings us one minute closer to the end. Not a pleasant thought. So, it is little wonder that the term anti-aging has been seized by marketers of various cosmetics, health supplements, exotic juices and dietary regimens. Anti-aging medicine is a growing field with numerous biotech companies working on drugs designed to combat the aging process.

The quest for immortality, of course, is not new. The ancient alchemists sought to turn base metals like lead into gold in order to find the secret of golds immortality. After all, the metal would not tarnish, it maintained its beautiful sheen and seemed to last forever. If they could find its magic, they could perhaps apply it to humans. But they never did find the secret. Lead is still lead and the alchemists are long dead.

This is not to say that there are not some intriguing possibilities that may help slow down the clock. As we age, an increasing number of our cells enter a stage of senescence in which they no longer divide and begin to release chemicals that cause inflammation resulting in damage to tissues. A buildup of senescent cells, sometimes called zombie cells, is a hallmark of aging. Can anything be done to prevent this buildup? Possibly. At least in mice. When researchers at the Mayo Clinic injected just a small number of senescent cells into young mice, their speed, endurance and strength eroded to that seen in a senior mouse in just a few weeks. When the mice were then treated with desatinib and quercetin, a combination of drugs known to destroy senescent cells, they recovered most of their lost physical capabilities within two weeks! Quite dramatic! But mice are not people, and while quercetin is a safe compound extracted from apple peel, desatinib is a very expensive leukemia drug with loads of side effects. Still, this experiment is a proof of principle, demonstrating that destroying senescent cells with senolytics is worthy of exploration.

However, slowing aging may not be a matter of what we do, but what we dont do. It may be that if we want to live longer, all we have to do is eat less. Calorie restriction has been the only sure-fire way that scientists have found to slow aging in animals from rodents to monkeys and now we are beginning to accumulate data that suggests this applies to humans, as well. The idea that less is more when it comes to eating is not new. Hippocrates noted that fat people were more likely to die suddenly than slender ones, and Avicenna, the famed Persian philosopher and physician, suggested that the elderly should eat less than when they were younger.

Venetian nobleman Luigi Cornaro may have been the first to put a restricted calorie diet to a test in the 17th century when he came to believe that his health was deteriorating due to excessive partaking of food, drink and sex. He then restricted himself to no more than 350 grams of food a day and 400 mL of wine and lived to the ripe old age of 98. He documented his regimen in his book Discourses On the Temperate Life and described how the changes he made in his lifestyle allowed him to remain in vigorous health well into old age.

Today, members of the Calorie Restriction Society that has the goal of increasing longevity are following in Cornaros footsteps and are acting as human guinea pigs. They consume no more than 2,000 calories per day, which is just over half of what an average North American wolfs down. They dont do this, though, by eating half servings of hamburger, fries or pizza. They do it by following a diet high in whole grains, fruits, vegetables, beans and fish. And according to a study published in the Journal of the American College of Cardiology, the austere regimen is paying off. Researchers examined the heart function of 25 members of the Calorie Restriction Society, and to their amazement found that the hearts functioned like those of people 15 years younger. But permanent hunger is not appealing.

What is appealing, however, is taking a deep dive into the science of aging. That is just what we will do this year at our annual Trottier Public Science Symposium, one of McGills largest annual public events. We have invited three expert speakers to address humans Longing for Longevity. On Tuesday, Oct. 22, Harvard Professor of Genetics David Sinclair, a world leader in aging research, will discuss how aging may be a treatable disease, and cosmetic chemist Kelly Dobos will scrutinize claims made by producers of anti-aging cosmetics. On Wednesday, Oct. 23, Ruth Westheimer, psychosexual therapist, author and pioneer of radio and television programs dealing with sexual issues will speak on Sex After 50. (Spoiler: there is.)

The symposium will take place at 7 p.m. both days at the Centre Mont Royal, 1000 Sherbrooke St. West. Admission is free. Arrive early.

Local fitness instructors and nutritionists offer unique approaches to healthy living at Soul Vegfest – KSNT News

TOPEKA, Kan. (KSNT) Personal trainers and nutritionists came together for the first Soul Veg Fest at Total Fitness Body Zone Saturday to teach the community about different approaches to healthy eating and fitness.

According to the Shawnee County Health Departments most recent health needs assessment survey, over one-third of adults in Shawnee county are obese and almost 25 percent dont exercise.

Nutritionist and vegan chef with Enliven Nutrition and Wellness Nicole Purce has dedicated herself to tackling the issue of obesity by showing people creative and natural ways to eat healthy.

You learn that eating just the simple things, one meal can change your life, said Purce. Its all based on what you do and how you do it. As a community thats fighting obesity, its the way to go. We have to change.

According to the Centers for Disease Control and Prevention, obesity is most common in African American adults, followed by Hispanic adults.

Personal trainer and owner of Total Fitness Body Zone Anthony Cay said a major contributing factor is an unhealthy diet.

Because of our cultures, we have high blood pressure, diabetes, high cholesterol, said Cay. When we eat our comfort foods or cultural foods, it isnt the best thing for us.

Thats why he and other nutrition experts wanted to present the community with healthy alternatives to traditional favorites.

Our challenge is to find a way to still be able to keep that flavor that you had as you grew up, whats your comfort food, what feels good to you and still be on the healthy side, said Cay.

While breaking old habits can be difficult, Purce said the first step is just giving it a try.

The first step starts with you, said Purce. The mind is the hardest part to have to overcome. Its that thought of I cant, I cant, and know that yes, you can.

The event featured several vendors that offer vegan dishes, like Globe Indian Cuisine and Topknotch Vegan Vittles.

Juice your heart out with this beast of a machine it’s 30 percent off today – Yahoo Lifestyle

Yahoo Lifestyle is committed to finding you the best products at the best prices. We may receive a share from purchases made via links on this page.

Omega Juicer Extractor and Nutrition Center. (Photo: Amazon)

There are juicers, and then theres theOmega Juicer Extractor and Nutrition Center. This thing is so powerful and multifaceted, we couldnt resist telling you about it. And it doesnt go on sale often but today only, its 30 percent off. So get to juicing!

The Omega is like a one-stop-shop for healthy living. Whats different about this machine is that it uses a slower speed than others. That means minimal heat buildup and oxidation to promote healthy enzymes. And you get a boatload of nutrients, vitamins, taste and juice from the least amount of produce, saving you hard-earned moolah.

In addition to juicing all your favorite fruit and veggies, it comes with everything you need to make all-natural nut milk, soy milk, nut butters, frozen fruit sorbets, pasta, baby food, minced herbs and ground beans. The motor is quiet but powerful, too. Youd think this powerhouse would be annoying to clean but with automatic pulp ejection, its simpleand reviewers can vouch for this fact:

The best juicer I have owned, says a juice aficionado. I have had centrifugal juicers before and they are messy (had stains on the ceiling), noisy, hard to clean, and annoying to store. The Omega juicer is the complete opposite. It is extremely easy to set up, use, clean, and store. No juice or pulp goes flying across the room. It is much quieter so you won't wake up sleeping kids. The juice comes out with little to no foam and the pulp is as dry as a bone. Folks who juice soft fruit and vegetables and do not alternate the hard and soft will complain that it doesn't juice well, but that means they did not read the manual and deserve it.

This is without a doubt one of the best purchases I have ever made, raves a fan. This is the second juicer I have purchased over the years. The first one was a high speed Braun that never really extracted thoroughly, and the clean up was a pain in the posterior! This Omega masticates which is low temperature because it crushes and squeezes. Clean-up is an absolute snap. It only takes me five minutes or less to clean all parts after each use...It can turn frozen bananas into a creamy dessert that looks life soft serve ice cream and tastes amazing. You will NOT be disappointed purchasing this juice extractor. I have no negatives, only positives to say about this juicer.

With all parts included, it can make everything from almond butter to wheatgrass juice. (Photo: Amazon)

3 healthy eating habits from the longest living people in the world – Well+Good

You could say that folks who live in Blue Zones are winning at life. Its not unusual for some residents of Okinawa, Japan; Sardinia, Italy; Nicoya, Costa Rica; and Icaria, Greece, to live upwards of 100 years. And while its their holistically-minded lifestyle that accounts for their centenarian reputation, their diets are a major, major part of that.

The Longevity Plan author John Day, MD, has lived among various Blue Zone populations, and he says that their keep it simple approach to nutrition accounts for why they thrive. The key to healthy eating is really quite simple, says Dr. Day. As I counsel my cardiac patients every day, if they can just do three things, then they are 90 percent of the way to a healthy diet and a healthy weight. No surprise here: those three things happen to appear in the Blue Zones nutritional guidelines.

Below, Dr. Day breaks down the trifecta of food tenets straight from the happiest, healthiest people inhabiting this planet called Earth.

There is absolutely no health benefit from eating added sugars, says Dr. Day. Added sugars only dramatically increase your risk of obesity, diabetes, and cardiovascular disease. Not to add insult to injury, but the sweet stuffs also not great for your gut or your anxiety levels, so try your best to stick with no more than 25 grams of added sugars per day.

Check out these low-sugar brownies:

This isnt a surprise to anyone, but processed foods arent all-stars for your health. In fact, a 2019 study found that people who were allowed to eat processed and ultra-processed food at 508 calories more each day than those who could only eat whole foods. As with added sugars, there is absolutely no health benefit from fake foods: processed, prepared, and fast foods, says Dr. Day. These foods are full of sugar, unhealthy oils, and salt which also lead to weight gain, diabetes, and cardiovascular disease.

Avocados are a great example:

Natural whole vegetables are the key to health, healing, and preventing cardiovascular disease. These non-starchy vegetables will lower your blood pressure, scrub your arteries clean, and will help you to maintain a healthy weight, says Dr. Day. Make your refrigerator look like a rainbow threw up, and youve already taken a giant step forward on your health journey (Blue Zones-style).

Always, always buy this produce organic:

Eating ugly vegetables can change the way you think about food. And, if youre curious how people eat in other countries, heres a look at 6 healthy plates from around the world.

Christopher Dobson: chemist whose work on proteins advanced research into neurodegenerative diseases – The BMJ

Christopher Dobson, master of St Johns College, Cambridge, whose work on proteins advanced research into diseases such as Parkinsons and Alzheimers, died at the Royal Marsden Hospital, Surrey, at the age of 69.

Born in Rinteln, Germany, the son of Arthur Dobson, an army officer, and Mabel, ne Pollard, Christopher Dobson was educated at Hereford Cathedral Junior School, Abingdon School (where he was a rowing cox), and Keble College, Oxford, where he took a first in chemistry before going on to take a DPhil at Merton College. Both his parents were originally from Bradford in Yorkshire and had left school aged 14. He had two elder siblings, Graham and Gillian. Because of his fathers postings, Dobsons early life was fairly nomadic. He grew up in Nigeria in the formative part of his childhood, which created a lifelong fascination with different cultures, said his son, William. He first wanted to be an architect but owing to inspirational science teachers at Abingdon, he instead chose to study chemistry at university.

Dobson devoted his life to researching diseases such as Parkinsons and Alzheimers and understanding the chemical processes that disrupt the production of healthy proteins and instead trigger their aggregation into toxic clumps. He became one of the worlds leading experts on protein folding and aggregation, and its links to neurodegenerative conditions. Alzheimers disease is a new plague, already affecting 40 million people worldwide, he said. Its one of a group of non-infectious diseases that terrifies us.

UT molecular evolution professor named 2019 American Physical Society Fellow – UT The Daily Texan

The American Physical Society recently recognized a UT professor of molecular evolution as one of their 2019 fellows.

Claus Wilke said he was nominated by the Division of Biological Physics within the society and was given the fellowship in October. Associate physics professor Vernita Gordon said Wilke got his nomination for his studies of protein biophysics and molecular evolution.

Gordon said half of 1% of society members receive fellowships every year based on notable research findings in their field of study. Gordon also said 168 fellows were selected this year, and seven of these fellows were nominated within the biophysics field.

(Wilke) is really deserving of this award, Gordon said. Theres stuff to back up why they have made contributions at a level significant enough that they should be recognized as an APS fellow.

Wilke said his research identifying the primary driver of protein sequences, or sequences of organic compounds known as amino acids, kick-started his nomination from the division. He said his research combined physics and biology to showcase the functions of protein folding and the advancement of genetic sequences.

Wilke said he researched genetic mutations and patterns visible in the evolution of genomes, or an organisms genetic material, related to mutation structures. He said he studied the areas where more harm is caused from mutation and how it would affect the shape of protein sequences.

Everybody knows Jenga, Wilke said. So theres pieces that you just take out, and nothing is going to happen because the tower is stable, but theres other pieces that after a while you cant touch them because the whole thing would fall. So, what Im doing is a lot like that. Im trying to figure out which are the (proteins) that can be changed and which parts cant.

Nursing freshman Margarita Ramirez said she is becoming aware of the topics Wilke researched and how they compare to previous biophysics research.

Its good that he got awarded for (sequences) because its something having to do with evolution, and not a lot of people are looking into proteins, Ramirez said. His study is very unique compared to other biological professionals because its not just looking at DNA. Its looking deeper.

Wilke will be presented with the award in March 2020 during an annual ceremony where the society hosts fellows and other contributors to the study of physics.

Researchers Find Fish Wearing Natural ‘Bullet-Proof Vest’ to Thwart Piranhas in Amazon – News18

One of the worlds largest freshwater fish is protected by the natural equivalent of a bullet-proof vest, helping it thrive in the dangerous waters of the Amazon River basin with flexible armor-like scales able to withstand ferocious piranha attacks.

Researchers from the University of California, San Diego and University of California, Berkeley on Wednesday described the unique structure and impressive properties of the dermal armor of the fish, called Arapaima gigas. They said their findings can help guide development of better body armor for people as well as applications in aerospace design.

The fish, also known as pirarucu, gets up to 10 feet (3 meters) long and weighs up to 440 pounds (200 kg). Arapaima, a fish that can breathe air and survive up to a day outside of the water, inhabits rivers in Brazil, Guyana and Peru infested with piranhas, known for razor-sharp teeth, incredible bite strength and deadly feeding frenzies.

There long has been an evolutionary arms race in which predators develop ways to kill - like sharp teeth - and other animals develop ways to stay alive like the dermal armor seen in various fish, dinosaurs and mammals over time. Arapaimas scales, the researchers said, possess all the best attributes of a bullet-proof vest, but the elements are better integrated into one solid piece combining imperviousness and flexibility.

Such lightweight and tough materials like fish scales are the sexy topics that materials scientists are pursuing, said Wen Yang, a UCSD materials scientist who helped lead the study published in the journal Matter.

It is true that the natural armor is similar to artificial body armor because of the similar scale overlapping system. However, the natural armor such as these fish scales is tough and much lighter, without impeding body flexibility and locomotion, Yang added. Remember that the fish scales were developed through hundreds of millions of years. They are very advanced.

The researchers conducted laboratory tests of the scales.

The scales, they found, have a hard mineralized outer layer to resist penetration that is bound to a tough-but-flexible inner layer by collagen the main structural protein in skin and other connective tissues in the body.

This structure means the scales can become deformed when bitten by a piranha but are not torn, broken or pierced, protecting the fish from injury.

We were able to see how the collagen fibers deform without a catastrophic failure including the mechanisms of twisting, folding, sliding, stretching, delamination, Yang said.

The study was backed by the U.S. Air Force Office of Scientific Research.

Food for the soul: Traditional gyza makers and eaters in Utsunomiya try to keep the dumplings rolling – The Japan Times

UTSUNOMIYA, TOCHIGI PREF. Albert Kuwano Bakonyvari beckons me inside his factorys steam chamber, where hundreds of plump, white, crescent-shaped gyza dumplings are neatly lined on stacks of trays fitted in steel racks, waiting to be sent to the freezer.

Want to try one? I bet you havent eaten gyza at this stage of production, says the tall Hungarian-American with a goatee.

As I bite into the chewy dough, the warm juice from the ground meat and finely chopped cabbage, chives and leeks spill into my mouth as the scent of garlic hits. Unlike some of the gyza Ive had in Tokyo eateries, its surprisingly flavorful even without dabbing it in the typical soy sauce, vinegar and chili oil (ryu) combination, a characteristic I later learn is part of what defines the gyza made in Utsunomiya, Tochigi Prefecture, where some restaurants advise against the overuse of condiments to avoid killing the flavor of the dumplings.

Weve put a lot of time and energy into the dough and I think the texture of our gyza is unique its firm but its delightful to eat at the same time, it doesnt fall apart but still has a softness, Kuwano, 54, says.

For the filling of the gyza, we use domestic ingredients. The meat, leeks and chives are from Tochigi Prefecture. We use garlic from Aomori Prefecture and cabbage from the Kanto area. We try to keep the flavor relatively simple so the taste of the vegetables can shine through.

This is the heart of gyza country, at the gyza capital of Japan that boasts the highest annual household expenditure on the finger-sized dumplings.

A successful branding campaign led by the city and local gyza restaurants and makers, combined with word-of-mouth recommendations and media exposure, has made Utsunomiya synonymous with the comfort food. Its a studied example of machiokoshi (town promotion), so successful, perhaps, that protecting the brand has become an occasional source of contention.

AQ Foods, founded by Hisashi and Ayako Kuwano in 1965 as Eikyu Shokuhin, has been running one of the citys largest wholesale gyza businesses, with its products being distributed to department stores and supermarkets across the nation. While the couple is now in semi-retirement, the business was handed down to their son-in-law, Albert, who arrived in Japan in 1991 and married the Kuwanos only daughter.

AQ now produces more than a dozen varieties of gyza and manj dumplings, with its flagship product being a hand-made jumbo gyza that weighs 50 grams more than double the size of a regular gyza.

You cant make quality gyza of that size using machines. Perhaps 35 grams is the limit, says Koichi Chiba, the manager of one of AQs factories in Utsunomiya, a land-locked city with a population of around 520,000. In an age of automation, Chiba says AQ is a rarity in that it still produces hand-made gyza alongside the machine-made variety.

A former itamae chef and a relative of Ayako Kuwano, Chiba and his brother joined AQ around two decades ago. The two apprenticed under the founding couple, with Chiba specializing in the art of making a balanced, flavorful filling that has just the right amount of salt, while his brother oversees the production of gyza wrappers from scratch.

For the jumbo gyza, we have people wrapping them individually and packing them in containers to be shipped, he says. Gyza this size requires real people folding the pleats to seal them. Its not a skill that can be learned overnight, he says, typically taking three months of training before the technique is mastered.

Gyza is made all over Japan, but the ones made in Utsunomiya are the best and I strive to improve our product everyday so I can say ours is No. 1.

Gyza traces its roots to Chinas jiaozi dumplings, which are thought to have originated during the Tang Dynasty (618-907), according to Hideaki Otsuka, a Tsukuba University researcher and expert on Chinese culture.

Dried jiaozi (mummified jiaozi, so to speak), had been excavated from the ruins of Dunhuang. Scholars were surprised to learn that a food so similar to todays jiaozi, with the typical features of the folded dumpling with pleats, a semicircular shape and pointed edges, was eaten in the Tang Dynasty (618-907), he said in a lecture he delivered at a food culture seminar hosted by soy sauce manufacturer Kikkoman Corp.s Tokyo headquarters.

Otsuka says an Edo Period (1603-1868) cookbook introduced three cooking methods for gyza deep-frying, pan-frying and steaming but at the time it was still seen as a Chinese dish and was not a common food.

Chinese cuisine, including jiaozi, began to be served in the Chinatowns of Yokohama, Kobe and other cities during the Meiji Era (1868-1912), but gyzas status wasnt elevated to that of fast food of choice until after World War II, when the repatriation of many Japanese from mainland China who were used to eating jiaozi sparked a gyza boom. But whereas boiled jiaozi is common in China, its birthplace, pan-fried gyza became the norm in Japan.

The first gyza restaurant in Utsunomiya is believed to have opened near Utsunomiya Station in 1952, followed by the predecessor to famed gyza chain Minmin. Other legendary gyza houses that still serve to this day followed, including Masashi and Koran.

Its unclear why gyza shops concentrated in Utsunomiya, although it may have to do with how the city produces many of the dishs essential ingredients of gyza, including pork, flour, cabbage and chives. In any case, Utsunomiya residents embraced the dumplings since 1987, when the then-Management and Coordination Agency began including foodstuff in its annual survey of consumer habits, the city has been repeatedly ranked as the nations top gyza consumer despite the fact that the results excluded gyza eaten in restaurants. The survey is based on average annual expenditure per household on ready-made gyza bought and taken home from supermarkets and gyza restaurants. That means if the figure included gyza consumed at the numerous gyza restaurants dotting the city, the number will likely be substantially higher.

An Utsunomiya city official saw the stats and came up with a plan to promote gyza as a tourist attraction, says Hoshimi Kawazu, a spokeswoman for the Utsunomiya Gyoza Association, an organization formed in 1993 with 38 gyza restaurants. The group became a cooperative association in 2001, and now boasts more than 90 gyza eateries and manufacturers as members.

Until gyza became Utsunomiyas buzzword, the primary tourist draw was the Oya stone mine, Kawazu says, but the quarry that once supplied the Oya stone used for numerous structures in Japan collapsed in 1989, and the city needed an alternative attraction.

In 1993, a TV Tokyo variety show ran a series of programs on Utsunomiyas love affair with gyza. Coupled with the launch of an annual gyza festival and the erection of the Venus of Gyza statue in 1994, Utsunomiya and its culinary pride were soon pushed into the national spotlight.

Utsunomiyas decades-long battle with rival Hamamatsu, Shizuoka Prefecture, over the title of No. 1 gyza-consuming city has also become an annual media event. Hamamatsu beat Utsunomiya in 2018, with households spending an average 3,501 annually on gyza, compared to 3,241 in Utsunomiya.

Until I moved to Utsunomiya 10 years ago, I wasnt aware how much gyza is a part of peoples lives, Kawazu says. I also think what distinguishes us from other regional revitalization projects is how we work hand in hand with the city office.

As the associations influence grew, however, it also began implementing stronger measures to protect its brand. The Utsunomiya Gyza Association was trademarked in 2001, followed by Utsunomiya gyza being trademarked in 2002. These actions were aimed at clamping down on low-quality gyza calling themselves Utsunomiya gyza despite being produced and sold in other prefectures, Kawazu says.

Legal action ensued over the usage of the brand name, and association members were asked to follow strict orders when utilizing the trademarked brand.

In 2017, the operator of Utsunomiya gyza chain Umaiya which isnt a member reached a settlement with the association after being sued for using Utsunomiya gyza in its logo. Umaiya offered to take down the word ganso, or original, from its product logo and apply for membership.

Then in May, Kuwanos AQ Foods was removed from the gyza association, despite being one of the oldest gyza manufacturers in the city.

We were asked to join the association to promote Utsunomiya gyza and make it a thing, Kuwano says. We had already been selling it all over the country as Utsunomiya gyza, and the founder of the association knew that and was eager for us to join since he wanted to use our connections.

For a long time, the partnership was fruitful, Kuwano says, as Utsunomiya cemented its status as the gyza mecca, drawing hordes of hungry tourists.

Unfortunately, all good things like that end up having people with different priorities, and eventually the association started to control the name of Utsunomiya and a lot of our salespeople who used to sell our products as Utsunomiya gyza were not allowed to do that anymore. The association started to say the name should only be used in Utsunomiya and not around the country, whereas our business is promoting it all across the country.

We just had very different paths that we ultimately took, so yeah, were not part of the association anymore.

Without discussing specific issues, Kawazu of the gyza association says these rules are aimed at controlling quality and to prevent outside makers from using the brand to lure customers.

Utsunomiya gyza is such a broad term that it makes it difficult to trace who the producer is when issues surface if its used indiscriminately.

Dumplings are universal, as seen in their many variations, including the South Asian samosa and momo, and European pierogi and ravioli, says Izumi Kitta, a voice actress and gyza specialist who also serves as a special ambassador for Utsunomiya gyza.

So, in a sense, it was only natural for it to acquire comfort food status in Japan, she says, adding that she believes Utsunomiyas public relations campaign helped raise its national prominence.

Kitta, who is currently studying in the United Kingdom, says there were times she would eat gyza three times a day back in Japan. I think I was eating around 400 meals of gyza in 365 days, she says. Now that she lives in England, she goes out hunting for restaurants serving gyza and hosts gyza parties with friends. It made me want to spread the gospel of gyza across the world, she says.

Gyza has come a long way from its humble beginnings to become firmly embedded in Japans culinary psyche. For Hisashi and Ayako Kuwano, their encounter with gyza was life-changing.

Hisashi, 82, met Ayako, 84, when he was employed as a chef at a Japanese restaurant in Ishinomaki, Miyagi Prefecture. The two soon fell in love and ran off together to Tokyo, where Hisashi hopped around eateries. They ran a food stall, and at one point even cruised around the capital selling fish on a bicycle, but decided to settle down in Tochigi Prefecture, where Hisashi hails from, when their daughter was born.

The couple opened a restaurant in Utsunomiya in 1963 that served popular standard fare such as ramen and chhan fried rice. One of the regulars was a factory manager for Utsunomiya-based ice cream maker Futaba Foods Co. who suggested the restaurant serve frozen gyza dumplings Futaba was making to compensate for the fall in ice cream sales during the winter season.

However, Futaba would halt the production of frozen gyza once spring came, so we decided to make our own to satisfy our customers needs, Ayako says. The couples gyza was a hit, and they eventually began selling them to other restaurants, and later established a factory.

It wasnt all smooth sailing, however, and at one point the business was on the verge of collapsing when the price of cabbage soared.

We fell from the mountaintop to the bottom of the canyon, Ayako says. My husband suggested we get a divorce so I wont have to be burdened by debt, but I couldnt imagine my family being separated. In the end, we somehow managed to crawl back up.

The business persevered, and the number of employees grew. Albert, a California native, married the Kuwanos daughter in 1997 and later took over the gyza business.

I think my father-in-law stumbled upon the perfect product because gyza has every major food group you get your carbs, protein, vegetables and it happens to taste very good, Albert says. Its very satisfying but not expensive, so it kind of hits every point.

In 2012, Kuwano launched a craft beer importing business called AQ Bevolution, and opened the Titans Craft Beer Taproom & Bottle Shop in Tokyos Otsuka neighborhood to showcase the beer the company imports and, guess what? AQ Foods gyza.

We have our gyza and beer at one location, Kuwano says. And, as you may know, gyza and beer go well together.

The laid-back American may be an unlikely heir to a Japanese family-run gyza business, but Ayako and Hisashi appreciate his efforts to keep the company going despite the occasional ups and downs.

Asked whether he had any reservations having a foreign national marry their only daughter, Hisashi shakes his head.

Really? Ive heard you didnt want her to marry a gangster or a foreigner, Albert quips.

Hmm, perhaps, Hisashi says with a grin, his eyes wandering as if to recall a distant memory. However, he doesnt forget to add, Were grateful to have you.

Polymers are Improving Our Ability to Diagnose Cancer – Advanced Science News

Molecular imaging provide a detailed glimpse into intricate biological processes and has emerged as a crucial tool in diagnosing numerous diseases and monitoring a patients response to therapy.

The development of optical contrast agents that are highly sensitive and specific to a particular disease, such as cancer, remains a great challenge for researchers. Small molecule optical contrast agents have demonstrated good biocompatibility for cancer imaging. For instance, indocyanine green (ICG), a cyanine dye, has been approved by the US Food and Drug Administration (FDA). However, poor solubility in water, aggregation-caused quenching, and rapid clearance from the body limited their application in clinic.

To overcome this disadvantage, one approach involves using polymers to improve the water solubility and extend blood circulation time of optical contrast agents.

A recent study published in WIREs Nanomedicine and Nanobiotechnology by Professor Xiqun Jiang of Nanjing University and coworkers, analyzes recent developments and challenges in the field of polymer-modified optical contrast agents to improve the sensitivity and specificity of cancer diagnosis.

A number of hydrophilic or amphiphilic polymers linked to therapeutic agents have already been approved by the FDA for clinical use. For instance, polyethylene glycol (PEG), a polyether compound made from the condensation of ethylene glycol, is generally recognized as safe and can be linked through covalent or non-covalent conjugation of PEG polymer chains to small molecules or macrostructures, such as a drug or therapeutic protein. An successful exmaple of this is DOXIL, the first FDA-approved nano-drug for cancer chemotherapy, and is comprised of PEGylated liposomal Doxorubicin.

Therefore, modification strategies which implement polymers to improve biological capabilities of therapeutics are also, logically, a promising avenue to improve the sensitivity and specificity of optical contrast agents. Polymer modification strategies create a hydrophilic layer around the optical contrast agents, endowing them with improved water solubility, and decreases the likelihood of proteins from binding to them in vivo, leading to extended blood circulation time.

Compared to always-on optical probes, which emit signals through accumulation regardless of their interaction with the target, activatable optical probes are designed in the off state and are designed to emit specific signals only in response to biomolecular recognition.

In such cases, the unique nature of the tumor microenvironment (TME) provides this opportunity as it differs from normal tissues and exhibits abnormal physiologic conditions, including weak acidity microenvironment, hypoxia, increased level of reactive oxygen and nitrogen species, as well as overexpressed enzymes. These conditions offer the potential biomolecular recognition sites to actuate the activatable optical probes with high signal-to-background ratio for cancer diagnosis.

While this field of research provides a promising strategy for developing enhanced diagnostic tools, challenges still remain before polymer-based activatable optical probes can be extended to clinical application. For instance, most polymer-based optical probes are cleared from the body via hepatobiliary excretion due to their relatively large sizes, leading to a longer retention time of probes compared to their small molecule counterparts.

Though the long-term safety of these polymer-based optical probes requires further investigation, this approach continues to offer the promise of significantly enhancing the sensitivity and specificity of cancer diagnosis to improve patient prognosis and, most importantly, survival rates.

With winter right around the corner, many in the valley are getting ready for their first day on the slopes. Perhaps theyve even already hit Keystone and Arapahoe Basin, which opened last weekend.

To best prepare for the season and to reduce the risk of injury, winter sports enthusiasts from beginners to experts should start conditioning themselves now. Skiing and snowboarding use specific muscles that are relatively dormant during the off season, so unless youve worked those muscles already, you might be in for a rude awakening after that first day on snow.

Most winter sports are anaerobic activities with short, intense bursts of energy mixed with periods of rest, therefore its important to first build an aerobic base. One of the best ways to do that is to run at an easy or moderate pace for a continuous period of time, while slowly adding mileage and time as workouts get easier. Increasing intensity will help develop a higher anaerobic output, which means you can ski/snowboard harder, faster and longer.

Strength training is also key to a conditioning routine and should include all muscle groups to build overall body strength. Its also important to target isolated muscle groups around the joints, which will help reduce the risk of injury. Finally, stretching and gentle movement exercises will help with the flexibility, balance and coordination that is so important on snow.

Creating and sticking with a routine can seem daunting but help from a professional trainer or taking a winter sports conditioning program can get people started in the right direction.

For the 2019-2020 season, Aria Athletic Club at Grand Hyatt Vail is one of several athletic facilities in the valley offering a winter sports conditioning program. Classes run through November 13. All levels and abilities are welcome, and instructors will help with modifications when needed. The progressive program is designed to increase anaerobic output, so its recommended that individuals attend regularly to gain the most out of the program.

Program perks include continuous randomly drawn prizes and opening and closing parties, with food of course. The program is free for Aria members and memberships are available for as low as $94 per month. Nonmembers are welcome to drop-in to any class for $20 per class.

Emily Dornan is the club director at Aria Athletic Club at Grand Hyatt Vail. For more information on the program and how to best prepare for the winter seasons, you can reach her at 970-479-5949 or edornan@ariaclub.com.

Healthy living class for adults with disabilities teaches cooking, food safety – The San Diego Union-Tribune

A group of about 15 adults with special needs spent an evening last week learning about kitchen and food safety as part of a class offered by Villa de Vida and the City of Poways recreation department.

The 10-week class is intended to teach adults with special needs, who are living independently or are soon to be, about cooking and healthy lifestyles. This includes watching food demonstrations and learning simple recipes for easy-to-prepare meals and snacks.

The class began on Sept. 17 and runs through Nov. 19. Topics include learning about salads, fruits, vegetables, meats and proteins, milk and soy products, beverages and more.

While the classes are normally held in the gymnasium of Meadowbrook Middle School, the Oct. 8 class was held at Elements Caf, on the grounds of the Poway Unified School Districts district office, 15250 Avenue of Science in Carmel Mountain Ranch. The caf is owned by Toni and Rick Kraft, who formerly owned Caf Merlot at the Bernardo Winery.

Toni Kraft, who is heading up the class series, focused the session on teaching the students about kitchen and food safety. She then taught the students about rubs and barbecue sauce, allowing the students to smell the spices to identify them, and served hamburgers with different sauces for the students to enjoy.

Students also toured the kitchen at Elements Caf to see how a professional kitchen looks.

Toni is the most amazing chef, and she does a lot of work with the (special needs) community, said Lori Kauffman-Faison, a volunteer with the class series.

This is the first class series offered by Villa de Vida, a 54-unit apartment complex that is being constructed in Poway on at city-donated 2-acre lot at Pomerado and Oak Knoll roads. The units will be rented to low- and moderate-income disabled adults who will live independently, with a manager onsite.

The healthy living class will be offered again in the winter, taught again by Kraft, as well as a new class on employment and financial management. The classes are part of Villa de Vidas efforts to offer social, recreational and educational classes to the community before (and continue after) the apartments open, said Kauffman-Faison. In the spring, a class called How to be Your Best will be offered.

The city provides the registration site and the meeting space, said Kauffman-Faison, and many of the students who are Poway residents were able to use city-provided scholarships to have the class fee waived.

Healthy Living: Influenza – WABI

BANGOR, Maine (WABI) - Influenza 2019-20Amy Movius MD, October 15, 2019

As the seasons change, so do the viruses in our environment. There are many viruses that can cause "colds and flu" illnesses during the winter, but only influenza viruses cause the flu against which the "flu shot" is designed. This is because every year, influenza viruses cause serious illness and death in many people: last year in the US an estimated 42.9 million people got sick, 647,000 were hospitalized and 61,200 died from influenza. It is very contagious and can be easily transferred between people or even from a contaminated surface to people. Symptoms include cough, sore throat, fever and muscle aches. It can lead to unpleasant complications such as ear and sinus infections and outright dangerous complications such as pneumonia, heart or brain inflammation, and various organ dysfunction.Flu season is generally considered to be between October and May, with peak season usually between December and February. It takes about 2 weeks for the full protection of the immunization from the shot to develop so getting it before peak season is best the current recommendation is to get the shot in October. The severity and strains of influenza viruses are constantly changing. Every year the shot is different based on the best predictions by the experts tracking these changes about what influenza viruses are likely to be circulating in the upcoming winter. This is one of the reasons the shot is never 100% effective against getting the flu. Also, the influenza viruses can continue to change or emerge even during the season. Despite these concerns, the shot can still be protective. Even if you get influenza despite receiving the vaccination it will very likely be less severe and shorter than if you were not vaccinated. A 2017 study in children showed that children with influenza who had received the vaccinations were much less likely to die from the infection than those who contracted influenza and were not vaccinated. These findings reinforce previous studies on adults. There are groups at particular risk from influenza infection: the very young, the old, pregnant women, those with lung or heart problems and children with neurological disorders. The best protection for these individuals is to get the flu shot and for everyone around them to get the flu shot. Though some groups are at greater risk from complications or death from influenza, remember it can (and does) happen to anyone including those in perfect health. It is recommended everyone over 6 months of age be vaccinated. There are young babies and others who cannot receive the vaccine for certain reasons. Their only form of protection is "herd immunity" meaning those of us who can be immunized getting immunized to reduce the amount of the virus in the community.Lastly, the flu shot absolutely does not cause the influenza! There is no active virus contained in the vaccine. If you get sick after getting the shot it is likely from a different virus (not influenza) especially if the season hasn't hit yet. If you're unfortunate enough get influenza anyway, though you may feel crummy, you're risk of ending up in the hospital or dying is still greatly reduced. To protect yourself and others even after receiving the shot, remember to frequently wash your hands and sneeze into the elbow rather than hands. "Social distancing" or keeping a couple feet between yourself and other people in gatherings, can also decrease transmission of virus. If you get influenza but are an otherwise healthy person please stay home and take care of yourself! Influenza will generally run its course over days to a week or two. However, if you feel extremely sick you should seek medical attention promptly. If you get influenza but have chronic medical issues or are in a high-risk group OR live with somewhat at risk, call your provider to get antiviral medication. Sometimes this can be arranged without a clinic visit which risks spread in the waiting room.
