A problem is that traditional lab testing is only looking for Celiac, which is the tip of the iceberg. There are frequently false negatives on the standard tests. This is because there are actually 12 antigens to gluten and gliadin, but the standard tests are only checking for 1. The actual huge iceberg is the group of people who have non-Celiac gluten reactivity. This means that their immune system is reacting to the gluten. They may or may not have digestive symptoms when they eat gluten.
