Santa J. Ono is a biomedical scientist and university administrator. He currently serves as Senior Vice President for Academic Affairs and University Provost at the University of Cincinnati. Prior to his move to UC, Santa served as Vice Provost for Academic Initiatives and Deputy to the Provost and then Senior Vice Provost for Undergraduate Academic Affairs at Emory University. He was educated at the University of Chicago, McGill, and Harvard, and was a Helen Hay Whitney Fellow in Biochemistry Molecular Biology at Harvard. He has taught at Johns Hopkins, Harvard, University College London, and Emory. In this talk, Ono examines the path to Global Citizens through American Higher Education. Korrie Mack #39;s first experience in a research lab involved unpacking boxes, organizing benches, assembling equipment, and labeling countless drawers to help a new faculty member set up his laboratory during the fall of 2011. A year later, the senior biochemistry major in Syracuse University #39;s College of Arts and Sciences, is cloning and purifying proteins, identifying their properties using mass spectroscopy, and carrying out her own research in the area of protein-based biological sensors. Mack and Manu Arul, a junior biophysical science major, are SU #39;s 2012 Beckman Scholars. Funded by the Arnold and Mabel Beckman Foundation, the highly competitive program supports select students interested in chemistry, biochemistry, and the biological and medical sciences. Beckman Scholars receive $19300 in financial support over two summers and a full academic year for laboratory research, scientific meeting travel funds, and research supplies. Mack and Arul are now halfway through their Beckman Scholars program. They spent the summer of 2012 working in research labs and will continue working on their projects through the summer of 2013. Mack works in the laboratory of Ivan Korendovych, assistant professor of chemistry; Arul works with Liviu Movileanu, associate professor of physics and director of the Biophysical Science Program in The College of Arts and Sciences. Your body lets you know when it #39;s running low on energy and nutrition. It tells you to eat. But how does food travel through the body? Follow us on a journey through 9 meters of human pipe lines and a dozen organs. The process starts straight after your first bite. The teeth munch the substance to a size you can swallow. Enzymes in your saliva start processing the food. Carbohydrate such as starches found in pasta begin to break down. From this point the digestive system swings into overdrive. Once swallowed the food is pushed by special muscles almost 30 centimetres through the oesophagus and ends up in the stomach. The stomach is like a mixer. The gastric fluids produced in the stomach break down the food into a liquid mixture. Proteins, like egg white or chicken, are digested. Depending on what kind of food is in your stomach, it spends between 15 minutes and 5 hours there before continuing to the small intestine. Carbohydrates leave the stomach relatively fast. Fats take much longer to be processed. When food arrives in the small intestine, it must travel the same distance as the height of a fully grown giraffe., Food continues to be broken down with help from the pancreas, the liver and the gallbladder. While in the small intestine most of the remaining nutrients are extracted from the food and absorbed in the body. After about four hours, the watery remnants of your meal continue to the large intestine. The large intestine is as long as a red kangaroo is tall.
