Dining services adds nutrition facts to daily menu

Written by Alyssa Morlacci Monday, 03 September 2012 18:24

With nutrition facts now available for Dining Services daily menus a health initiative thats new this semester its easier than ever for campus diners to choose which food items to stock up on and which to leave behind.

Before classes began, Kent State executive chefs compiled nutrition facts for the menus that change daily at Eastway Cafe and Kent Market, and the facts are listed at those locations, said Dining Services director Richard Roldan. Nutrition facts for more locations and items that are served every day are available on the Dining Services website.

We talk about nutrition and people wanting to understand what they eat, Roldan said. So for us it was important that everything was out there and the information was available.

On average, students gain three to 10 pounds during their first two years of college, and most students gain that weight during their first semester, said nutrition outreach coordinator Tanya Falcone.

There is a misconception that eating healthy on campus is impossible, she said, but with the facts, students have more choices than they might realize.

1. Keep meals at a maximum of 500 calories and 15 grams of fat. This is based on the 2,000 calorie diet that plans for three meals and two smaller snacks.

2. Split meals that have larger amounts of calories and grams of fat with a friend or eat half and save the rest for later.

3. Look for items that are grilled instead of fried.

4. Eat healthy foods during a craving. For example, instead of eating three pieces of pizza, have one piece and a salad.

Parents Failing To Make Informed Decision About Right Nutrition For Children

By Wan Shahara Ahmad Ghazali

KUALA LUMPUR, Sept 4 (Bernama) -- A child needs proper nutrition for a healthy and adequate development as well as strong physical growth.

A child's normal development and physical growth are crucial, particularly during infancy and up to the time he or she is around seven years old.

Hence, healthy nutrition is vital for a growing child and parents should ensure that they play an instrumental role in this aspect.

A recent study indicates that in the bid to ensure that their child gets all the essential nutrients, young mothers resort to using formula milk or growing up milk (GUM) for meeting the nutritional needs of their infants.

STUDY INDICATORS

The Nutrition Society of Malaysia (NSM), in collaboration with Abbott Nutrition, carried out a recent study, which included 300 mothers who have children below three years of age.

The study shows that several factors influence a young mothers' choice of GUM.

Obesity, nutrition may up kidney stones

Published: Sept. 5, 2012 at 9:50 PM

SANTA MONICA, Calif., Sept. 5 (UPI) -- Increased obesity and poor nutrition may be fueling the increase in kidney stones in U.S. adults, a food expert says.

"It is possible that better reporting and treatment options for kidney stones may have contributed to the numbers, there are other factors that might lend themselves to the development of kidney stones in children and adults -- the increase in obesity and poor nutrition," Phil Lempert, a food industry analyst, trend watcher and creator of supermarketguru.com, said in a statement. "Low fluid intake and high intakes of sodium as well as animal fat and proteins can contribute to kidney stones as well."

A study by researchers at the University of California, Los Angeles, and the Rand Corp. found the number of U.S. adults getting kidney stones nearly doubled since 1994.

"Hydration and a proper diet are the best ways to prevent stone formation. Drinking fresh lemon in water may help reduce the risk of kidney stone formation," Lempert said in a statement. "Lemon juice increases the level of citrate in the urine, which in turn may prevent the formation of kidney stones."

For some, avoiding certain high-oxalate foods may aid in preventing kidney stones including: Swiss chard, rhubarb, spinach, beets, wheat germ, soybean crackers, peanuts, okra, chocolate and sweet potatoes. Medium-oxalate foods include grits, grapes, celery, green pepper, red raspberries, fruitcake, strawberries, marmalade and liver, the Oxalosis and Hyperoxaluria Foundation said.

School nutrition will be the subject of at public forum hosted by the San Marcos Area League of Women Voters at 10 a.m. Saturday, Sept. 15 at San Marcos High School.

The free event will be held in the cafeteria right inside the front entrance. Parents of school-aged children and other interested community residents are invited to attend.

School nutrition was adopted as a study topic by the local league at its annual meeting in May of 2010.

The School Nutrition Study Committee, chaired by Jeannie Lewis, has met monthly for about a year and a half, and, according to Lewis, has learned much in the course of its research.

Lewis says the School Nutrition Study Committee has not yet completed its study so it has taken no public position regarding school nutrition.

She said the purpose of the Sept. 15 meeting is to introduce league members and the public to the new regulations and practices that have been put in place in the local school district.

Local league members will hold a formal consensus meeting on school nutrition next spring.

At the Sept. 15 meeting, Mike Boone, associate director of child nutrition for the SMCISD, will talk about the new nutrition regulations handed down by the U.S. Department of Agriculture last year and on the district's efforts to meet those guidelines.

At the end of his presentation, there will be a question and answer session, followed by samples of school breakfast and lunch items.

Tufts University Offers Master's In Nutrition For Distance Learners

Newswise The Friedman School of Nutrition Science and Policy at Tufts University today announced a Master of Nutrition in Science and Policy (MNSP) degree program that combines intensive on-campus residencies in Boston with online learning. The blended learning program will enroll its first cohort of students in the fall of 2013. The Friedman Schools blended learning degree is the only masters degree in nutrition in the United States that combines week-long residencies on campus with online learning.

The blended learning format will allow students from around the world to continue living and working where they choose while they study at one of the premier research universities in the United States, said Robin Kanarek Ph.D., interim dean of the Friedman School of Nutrition Science and Policy. Nutrition is a vitally important field, and the Friedman School is committed to educating and training future leaders who can create new knowledge and apply and disseminate evidence-based information.

For approximately one week each semester, students and Tufts faculty will meet at the Friedman School in Boston for a residency period that includes interactive coursework, lectures, seminars and collaboration among students of diverse backgrounds. These on-campus residencies will facilitate hands-on learning and in-person meetings among students and between students and faculty. Following each residency session, the coursework continues in a highly facilitated online environment, building on the knowledge and relationships developed on campus. Students may attend the program full-time or part-time.

The combination of online and on-campus learning was first developed by the Friedman School to bring graduate-level nutrition education to students in the United Arab Emirates and surrounding countries. The experience our faculty members have acquired in blended learning has given us a unique ability to educate students wherever they live and advance the schools mission of improving the wellbeing of persons, communities and populations worldwide, said Lynne Ausman, D.Sc., R.D., MSNP program director and Saqr Bin Mohammed Al Qasimi Professor in International Nutrition at the Friedman School.

The Master of Nutrition Science degree is part of the Friedman Schools fully accredited academic offerings and is taught by faculty from the schools campus in Boston, Massachusetts. Admissions, curriculum, and tuition information, as well as a video and downloadable brochure, are available online at http://nutrition.tufts.edu/mnsp.

The Gerald J. and Dorothy R. Friedman School of Nutrition Science and Policy at Tufts University is the only independent school of nutrition in the United States. School nutrition law takes bite out of portion sizes

The new federal law governing school nutrition means smaller slices of pizza and possibly higher prices for students in the Central Bucks School District.

To comply with the Healthy, Hunger-Free Kids Act of 2010, pizza slices are now 2 inches smaller, said Alicia Kent, senior director at Aramark, which provides food service to the districts schools.

Aramark officials reviewed the new law and its impact during a school board meeting on Monday evening.

The 14-inch pizza slices are necessary, Kent said, to comply with the maximum calorie and grain restrictions in the new law, which went into effect this year and will be fully phased in over three years.

In addition, she said, if a student fails to select a fruit or vegetable as part of his or her meal, the cost will be higher than a student who does make that part of the meal. Thus, a student selecting a slice of pizza and milk will pay more than a student purchasing pizza, an apple and milk.

If they dont take a fruit or vegetable they are charged a la cart pricing, Kent said. Theres a little bit of sticker shock when they are coming through the line and learning what the new requirements are.

There may be a monetary impact on the district as well, she said, noting that the district will not receive reimbursement for student meals that do not meet the new U.S. Department of Agriculture requirements.

These are really significant changes of what the students are allowed to eat, she said.

Among the changes required are the use of only fat-free flavored milk, decreased sodium levels and at least half the grains offered must be whole grain. It also requires different nutrient levels for different age groups.

The new rules will be challenging for students, she said, and require education of students and parents.

Danone plans to double domestic nutrition biz in 4 yrs

Danone plans to double domestic nutrition biz in 4 yrs The French firm had acquired the nutrition business of Wockhardt for a consideration of Rs 1,280 crore Press Trust of India / Mumbai Sep 30, 2012, 13:09 IST

French dairy giant Danone, which had acquired the nutrition business of Wockhardt, plans to double the domestic baby and medical nutrition business in three to four years, a top company official has said.

The French firm had acquired the nutrition business of Wockhardt for a consideration of Rs 1,280 crore, paving the way for its entry into the domestic baby and medical nutrition market and the new entity was named Nutricia International.

Danone had earlier this year acquired drug firm Wockhardt's various brands under its nutrition business, including Farex, Protinex, Dexolac and Nusobee, apart from related industrial operations from Carol Info Services based in Punjab.

When asked if the company would launch its global brands in the baby nutrition business here, Marcel said, "We will leverage on the existing brands in the first phase, as we want to leverage the strengths of Wockhardt's brands and understand the market better.

"We will see when it is a good time to bring in new brands. This is a strategic roadmap that takes some time for implementation".

Danone sells its baby nutrition products in 137 countries with a strong presence in the Asia-Pacific region, which accounts for around 40% of its volumes.

Its baby nutrition brands include Milupa, Bledina, Gallia, Aptamil, SGM and Dumex among others.

On the investment side, Marcel remained tight-lipped on the amount, but said the company would be pumping in money to enhance capacity.

"We know factories will be reaching full capacity soon. So we will have to plan the next step of investment. We will invest for sure, but I cannot share the numbers. Our plan is to keep manufacturing here, so we will have to invest in production facilities in the coming years," he said.

WHO Calls For Expanded Nutrition Interventions

WHO News Release

WHO Calls For Expanded Nutrition Interventions To Avert Child Deaths

HANOI, 25 September 2012With solid evidence pointing to proper nutrition as essential for survival, health and development, the World Health Organization raised malnutrition high on the agenda of the Regional Committee for the Western Pacific.

The Regional Committee, WHO's governing body in the Region, is meeting in Hanoi from 24 to 28 September to review WHO's work in the Region and to set future directions to improve the health of the Regions people.

Addressing the Regional Committee, Dr Shin Young-soo, WHO Regional Director for the Western Pacific, said that despite a drop in undernutrition rates in the Region, "there is no room for complacency as the levels of maternal and young child undernutrition continue to be too high. At the same time, the rising rates of obesity and noncommunicable disease represent an epidemicone that is growing fast in our Region. This double burden of malnutrition leads to long-term negative impacts on the health and development of the people and for the economies of Member States."

Adequate provision of nutrients, beginning at the earliest stages of life, is essential to ensure good physical and mental development and long-term health and productivity.

Dr Shin warned that many countries in the Region now tend to focus on the problem of overnutrition even as undernutrition and micronutrient deficiencies continue to be a problem.

In an effort to address malnutrition, the Regional Committee, composed of 37 countries and areas in the Western Pacific, pledged to scale up and sustain cost-effective nutrition interventions aiming to prevent more than 100 000 under five-year-old child deaths per year in the Region. This means saving more than 270 lives of children under five years every dayor 11 lives per hour.

Dr Shin urged the Regional Committee to expand areas for action, to identify targets and priority actions in health and other sectors, and to adopt a time frame and indicators for monitoring.

The Regional Committee is set to endorse a resolution to scale up nutrition, based on the WHO Comprehensive Implementation Plan on Maternal, Infant and Young Child Nutrition. It called for increased investment in 20122025 to expand nutrition interventions, with targets to reduce substantially the double burden of malnutrition and related mortality and morbidity, including stunting and wasting, anaemia in women and low birth weight. At the same time, the plan seeks to increase exclusive breast-feeding and to stop the rapid increase in obesity among children.

The Fortune Society and Aetna Foundation Celebrate Food & Nutrition Program for Low-Income Families

NEW YORK--(BUSINESS WIRE)--

Harlem resident and mother, Barbara Biscaino, presented a live cooking demonstration today preparing her favorite healthy dish -- corn and cucumber salad -- in front of a live audience that included Manhattan Deputy Borough President Rose Pierre-Louis; JoAnne Page, President and CEO of The Fortune Society; Sharon Dalton, Vice President of the Aetna Foundation; and Harlem families. Biscaino learned how to prepare the dish as well as dozens of other healthy meals while participating in The Fortune Societys Food & Nutrition Program for Families & Children. The cooking demonstration, which was held at The Fortune Societys LEED-certified, affordable housing facility known as Castle Gardens, highlighted the success of the food and nutrition program.

In December 2011, with a $25,000 grant from the Aetna Foundation and a supplemental grant from the New York State Department of Healths Hunger Prevention and Nutrition Assistance Program (HPNAP), The Fortune Society launched the Food & Nutrition Program for Families & Children. Since the program began, approximately 800 Fortune families and children, which include formerly incarcerated adults and residents of Fortunes housing facilities in Harlem, have attended a series of nutrition education workshops, including Taste and Texture and Just Say Yes to Fruits and Vegetables. They also have participated in 35 cooking demonstrations, taking home bags of fresh produce after each one. The produce is provided by local suppliers Corbin Hill Road Farm and Brooklyn Grange Farm, which operates urban rooftop farms in Brooklyn and Queens. The two suppliers have distributed more than 4,500 pounds of fresh produce to Fortune clients and community members.

Since beginning the program, Biscaino and her daughter have learned how to convert their favorite foods into healthier alternatives; select, store and preserve fresh produce; prepare healthy, delicious and affordable meals; sanitize a kitchen; and write recipes.

Before enrolling in this program, my daughter and I would eat fast food three or four days a week, putting our health on the back burner. Now, our entire outlook on healthy eating has changed. Every day, we prepare and cook healthy meals together, making sure to include fresh fruit and vegetables into all of them. Because of this change, we both feel more energetic and will hopefully live longer. I have already lost a few pounds, said Biscaino.

Many of our Fortune families live on a tight budget, eating whatever food is most affordable and assuming healthy meals are too costly to prepare, said JoAnne Page, President and CEO of The Fortune Society. The Food & Nutrition Program shows our families that they can prepare healthy, affordable meals and equips them with recipes and culinary skills that will last a lifetime. We thank the Aetna Foundation and the NYS Department of Health Hunger Prevention and Nutrition Assistance Program for supporting this program and helping our families make healthy eating a top priority in their daily lives.

In the upcoming year, the program will continue to offer regular cooking demonstrations and will increase the number of hands-on workshops so that more participants can learn by cooking during class. The class curriculum will have a greater focus on the participants needs, such as child and family nutrition, heart-healthy eating and diabetes education. The program also will include recipe selection workshops, nutrition-related activities and a field trip to one of the supplier farms.

Research shows that diets rich in fruits and vegetables can prevent obesity and its related diseases, which disproportionally affect low-income and minority populations, said Sharon Dalton, Vice President of the Aetna Foundation, who manages the Foundations regional grant-making program. By combining access to fresh, local produce with crucial nutrition education, The Fortune Societys program can have a positive impact on peoples long-term health and well-being.

Preeminent Medical Association Issues Statement Calling For More Physician Training, Oversight for Expert Nutrition Care

JACKSONVILLE, Fla.--(BUSINESS WIRE)--

Physicians representing the American Association of Clinical Endocrinologists (AACE) today issued a position statement strongly recommending enhanced medical doctor training for and renewed focus on treatment of patients clinical nutrition needs.

At a time when the prevalence of nutrition-related illnesses is escalating significantly, both with ambulatory and hospitalized patients, many medical societies are reporting an inadequate number of physician members trained in this important specialty, said M. Molly McMahon, M.D., FACE, professor of medicine with Mayo Clinic Rochesters Division of Endocrinology, Metabolism, Diabetes, Nutrition and Internal Medicine, co-chair of the AACE Nutrition Committee and lead author of the position paper. Healthy nutrition is important for health promotion, disease prevention and disease treatment. We wish to develop focused nutrition education for endocrinologists, highlight the value of physician nutrition expertise, and address barriers in clinical nutrition practices to enhance clinical outcomes.

AACE is proposing a four-pronged strategy to address the problem: coordination of CME-accredited advanced nutrition education and training for clinical endocrinologists; an accompanying certification process; collaboration across the many medical disciplines and organizations with interests in nutrition to foster a critical mass of expertise across specialties; and widespread recognition and support of new models for physician-directed nutritional practices that will focus on the value created by such teams as relates to clinic outcomes and quality of life issues.

The statement is published in the September/October 2012 edition of the associations peer-revised medical journal Endocrine Practice (https://www.aace.com/files/position-statements/nutrition.pdf).

The International Youth Conditioning Association Runs Promotion on its Youth Nutrition Specialist Certification …

The worlds leading youth fitness organization, the International Youth Conditioning Association, is running a promotion on its Youth Nutrition Specialist Certification. The promotion is currently underway and ends Friday, October 12th at Midnight EST.

Elizabethtown, KY (PRWEB) October 10, 2012

The IYCA, the worlds leading youth fitness organization, is offering the nutrition certification after years of experience working with coaches and trainers who have expressed a desire to push their young athletes to the next level in areas beyond mere youth sports training.

A lot of youth fitness trainers and coaches come to us because they dont know how to take the next step when it comes to young athlete development, says Pat Rigsby, co-owner and CEO of the International Youth Conditioning Association.

What many youth sports coaches and trainers fail to understand is that athletes might not have people monitoring what they eat, Rigsby continues. Kids need to be taught proper nutrition, because in our society its very easy to be tempted to eat poorly.

Rigsby, a former college baseball coach, notes that trainers express reservations about branching into other areas of young athlete development beyond exercise and sports. Trainers shouldnt be content to just make exercise programs for kids, Rigsby says. Kids fitness is about developing the entire athlete.

One of the major concerns trainers have voiced is that there is not enough time during youth sports training sessions to address nutritional concerns. However, Rigsby notes that a good trainer will carve out time to address concerns that affect youth sports performance.

In fact, children often look to their coaches for any information that would help them with sports performance, including diet.

One final concern that plagues youth sports coaches is that they simply do not have the expertise to advice children on proper nutrition.

This is a valid concern, Rigsby admits. However, that is the entire purpose for the IYCAs Youth Nutrition Specialist Certification. We want to teach trainers and coaches how to instill proper eating in their young athletes.
