Our latest ChemMatters episode explains the science behind calories and nutrition facts labels. Find out how scientists first determined the calorie content of food in the 1800s, and how fat, protein and carbohydrate levels on nutrition facts labels are found today. The video explains that the calorie content of food was determined in the late 1800s by chemist Wilbur O. Atwater. Atwater built a four by eight foot device called a respiration calorimeter, which was big enough to allow a person to step into it! It measured the amount of heat they released, the amount of oxygen they consumed and the carbon dioxide they gave off after eating a variety of foods. Using this device, Atwater was able to measure the precise amount of energy contained in thousands of food items. He found that carbohydrates and proteins were worth 4 Calories per gram and fats about 9 Calories per gram. This 4-9-4 rule is at the heart of how nutrition facts labels are determined today. Nutrition Wellness Center of Sarasota explains that, after the flood waters receded, toxins were left over the area impacted by Hurricane Sandy.

Huffington Post reports that, after storm waters receded, a film of toxins was left over the northeast. From asbestos to lead, the dangerous substances that have been churned up by the hurricane are now exposed and capable of harming individuals who come into contact with them.

The EPA comments: "EPA, in support of FEMA, is working closely with federal, state and city agencies in assessing and responding to environmental concerns, including the Jewitt White Lead site, Newtown Creek and the Gowanus Canal. We have been providing information to the public about cleaning up after flooding, mold and how to safely dispose of household hazardous waste."

"Asbestos, released from the buildings destroyed by Hurricane Sandy, is one of the many toxins that have the potential to create long-term, negative health effects on the individuals directly impacted by this disaster," states Dr. Martin of Nutrition Wellness Center of Sarasota."Unfortunately, many of these health effects may not show up for months and years to come. It is as if the hurricane left behind a toxic soup that has infiltrated the air, water, food, and soil of the regionone that will continue to pose a threat to residents for years. Toxins can affect the cardiovascular system, immune system, brain, and endocrine system, to name just a few parts of the body that can be harmed through exposure. These toxins can create symptoms that, due to their emergence years later, will never be traced back to this event."

He encourages individuals living and working in areas affected by Hurricane Sandy to remain vigilant and avoid exposure to dangerous substances as much as possible.

The Vaccine and Gene Therapy Institute of Florida (VGTI Florida), a leading nonprofit immunological research institute, is pleased to announce the appointment of Ted M. Ross, Ph.D., as Program Director. Dr. Ross will explore new vaccine technologies intended to protect against all strains of seasonal influenza. Such a vaccine could potentially eliminate the need for seasonal flu shots.

Traditionally, the flu vaccine is a mixture of inactive influenza viruses. However, Dr. Ross is taking a novel approach by examining the use of a synthetic vaccine created from genetic sequences of many different flu viruses. Dr. Ross previously used this method to produce a vaccine against the H5N1 virus, commonly known as the bird flu. The vaccine, well-tolerated in pre-clinical trials, successfully protects against known strains of bird flu. Dr. Ross and his VGTI Florida colleagues are applying similar strategies to fight other serious viruses such as West Nile Virus, Dengue and HIV Type 1 (HIV-1).

The holy grail of influenza vaccine research is a vaccine that protects against all influenza strains, avoiding the need for annual vaccinations, said Jay Nelson, Ph.D., founder and Executive Director, VGTI Florida.
