Nutrition: Restaurants don't always meet nutritiional guidelines with kids' meals

Although childhood obesity rates are at an all-time high, restaurants have not seemed to have completely caught on yet.

A recent study by the Center for Science in the Public Interest (CSPI) found that 97 percent of children's meals available at the top restaurant chains don't meet recommended nutritional guidelines. Chicken fingers, burgers and fries continue to take center stage on kids' menus, and recommendations to improve the nutritional value of foods offered to kids have largely gone unanswered.

Recently when eating at a chain Mexican restaurant, I browsed the kids' menu. While there were a variety of choices for entrees, it was unclear by the meal description how the food is prepared. For example, an entree called Chicken Bites could be baked, grilled or fried, so a name like Grilled Chicken Bites would indicate a clearly healthier option. Fruits and veggies were well represented in the menu of side items, but a dessert was also included in each meal. Overall, I was surprised at the large size of the entree portion of the kids' meals and felt that the total amount included in the combination of foods provided in one kids' meal was in excess of what a child of any age needs in one sitting.

Besides, hitting the mark on healthy and nutritious kids' meals is about more than offering slices of fruit as an alternative to fries. It is about serving fresh, high quality foods in child-friendly portions. CSPI's nutrition

Although it is common knowledge that restaurant food is not prepared as healthfully as home-cooked meals, families do want healthier options to choose from when dining out, especially for children. Of 19 common restaurant chains surveyed, nine offered no meals that meet the National Restaurant Association's nutrition standards for kids' meals.

The CSPI recommends that restaurants redo their kids' menus to at a minimum meet the standards of the National Restaurant Association's Kids LiveWell Program. They also suggest that restaurants offer more whole grains, serve fruits or veggies as a default side item instead of fries, and continue to lower the sodium content of meals.

Here are some ways your family can eat healthfully when dining out:

" Speak up and make special request if needed such as "dressing on the side" or "hold the mayo" to cut back on added fat and calories.

" Create a kids' meal out of a combination of regular menu items such as side salads, soups, and side items.

" Share an adult meal. An adult restaurant meal is usually plenty of food to share with a child or split among a few children.

Nutrition Graduate Student Association holds 5th Annual Iron Chef Competition

Student chefs will battle it out this Saturday for the title of Iron Chef PSU in the fifth annual Iron Chef Competition .

The event is free and open to public and will run from 1:30 to 4 p.m. It will be held in the Hintz Family Alumni Center, although the actual cooking will take place in the Henderson Building. A live video feed will be shown in the family center for the public to watch while the chefs compete.

The chefs will work as teams to create multiple dishes in hopes of impressing the judges. This year, a total of nine teams have entered into the competition.

Before being allowed to compete, each team had to raise at least $100 to be donated to the State College Area Food Bank .

The teams will be given one hour to create multiple dishes for the judges. The food will be judged on taste, appearance and overall creativity.

The chefs are also required to incorporate a secret ingredient into each dish that will be given to them at the start of the competition, Wendy Stein (graduate student- nutrition) said.

It will be a fun experience to watch the different chefs cook with the unique ingredient, she said.

The event is sponsored by the Nutrition Graduate Student Association, which first organized the competition in 2008.

Mason school official talks nutrition with legislators

Mason City Schools Child Nutrition Supervisor Tamara Earl, SNS, recently joined 1,000 school nutrition professionals from across the country at the School Nutrition Associations 41st annual Legislative Action Conference in Washington, D.C.

Earl, vice president of the School Nutrition Association of Ohio since August, attended the conference to ensure Ohio has a voice at the national conference.

During the conference, Earl joined colleagues in discussing new nutrition standards for school meals and proposed regulations for foods sold in school vending machines, a la carte lines and snack bars. LACs Charge to the Hill allowed attendees to meet with members of Congress to discuss these topics and urge their support for school meal programs, which serve nearly 32 million students each school day. Partnered with Louise Easterly, Kettering Food Service Supervisor, and Dave Hackman and Carole Erb of JTM Foods, Earl met with representatives of Steve Chabots (District 1), Joyce Beattys (District 3) and Bill Johnsons (District 6) offices.

The conference came at a critical time as school cafeterias continue to implement new nutrition standards for school meals, which require more whole grains, fruits and vegetables and less sodium and calories on student lunch trays.

With Congress weighing new budget cuts and the U.S. Department of Agriculture drafting additional regulations for school cafeterias, it is critical for our leaders to hear directly from the experts in school nutrition on the importance of school meal programs to the health, well-being and academic success of Americas students, said School Nutrition Association President Sandra Ford, SNS.

Q: How long have you served as vice president of SNA? What do you do in that role?

A: I was elected last year and assumed the office on Aug. 1, 2013. I will serve this year and succeed to the office of president-elect on Aug. 1, 2014, and then president and president-elect.

In the role of vice president, I participated in the Legislative Action Conference sponsored by the national School Nutrition Association. I also recently chaired an Industry Seminar for members; industry participants included food manufacturers, equipment, and food distributors that support the needs of school food service. With the implementation of the Healthy, Hunger-Free Kids Act that reauthorized the National School Lunch Program, manufacturers continue to respond with reformulated products and it is essential for those in school food service to remain informed.

Q: What was the purpose of the conference?

A: The National School Lunch program is the largest of the federal child nutrition programs serving more than 31.6 million students per day. The School Nutrition Association is dedicated to protecting and enhancing childrens health and well-being through school meals and nutrition education. When additional nutrition and hydration are needed food should come first. However, sports drinks, bars and gels can be useful in supplementing an athletes meal plan immediately before, during, and after events. Sports foods may be especially helpful in cases where prolonged, high-intensity exercise limits eating opportunity, there is a high risk of intolerance and stomach (GI) upset, poor appetite around training and events, or food availability is limited.

If fluid needs are higher than carb needs: sports drinks with lower carb content or diluted sports drinks may be used. If carb needs are greater than fluid needs, sport drinks with higher carb content can be use or supplemented with sport gels/beans, or sport bars. As Coach Lisa recommended for Marc this week, he (and Lauren) should experiment with sports food and drinks to find quick energy sources that satisfy their taste preference and are well tolerated during training runs of 45 minutes or longer.

Sports drinksare designed to deliver a balanced amount of carb, fluid and electrolytes for rehydration and refueling before, during and after exercise. It states: It is the position of the Academy of Nutrition and Dietetics that all people should have consistent access to an appropriately nutritious diet of food and water, coupled with a sanitary environment, adequate health services and care that ensure a healthy and active life for all household members.The Academy supports policies, systems, programs and practices that work with developing nations to achieve nutrition security and self-sufficiency while being environmentally and economically sustainable.

Nutrition security includes access to nutritious foods and drinkable water; knowledge, resources and skills for healthy living; prevention, treatment and care for diseases affecting nutrition status; and safety net systems during crisis situations, such as natural disasters or social and political turmoil, according to the Academy.

Throughout the world, approximately 30 percent of children under age 5 are stunted in their growth and 18 percent are underweight. While these percentages are decreasing, they remain unacceptably high in some regions. In addition, vitamin and mineral deficiencies affect about 36 percent of the worlds population.

The Academys position paper focuses on nutrient deficiencies in developing nations and the contributions especially on the part of food and nutrition practitioners that are necessary to create global solutions.

Sports Nutrition for Food-Sensitive Athletes

As triathalon season approaches each year, my patient roster becomes peppered with endurance athletes emerging from the winter hiatus. As they look ahead to triathlons, half-marathons, marathons and other highly-competitive events, questions arise about the beverages, bars and energy shots they should use to fuel these athletic endeavors.

I've reported previously about a category of poorly-absorbed carbohydrates called FODMAPs, which range from fructose and lactose to sugar alcohols (or polyols) and bean-derived galacto-oligosaccharides (GOS). In susceptible people--and particularly in larger doses--these carbs can trigger symptoms like gas, bloating and diarrhea. As it turns out, sports nutrition products are generally loaded with high-FODMAP ingredients.

As a result, sports nutrition products are terribly difficult to navigate for endurance athletes with Irritable Bowel Syndrome (IBS) or other food sensitivities. To complicate matters, many of these products are sold as dietary supplements rather than as food; their labels, therefore, may not disclose all the details one needs to decipher what's actually in them and at what levels. What's a sensitive-bellied Ironman to do?

-- Learn the lingo: High-FODMAP ingredients hide behind other terms on ingredient labels, particularly in sports nutrition products. Lactose isn't likely to be listed on a label, but you'll be getting plenty of it in a product with whey, whey protein concentrate, milk protein concentrate or (powdered) milk at the top of the ingredient list.

Fructose is easily recognizable as a stand-alone ingredient or within high-fructose corn syrup--but lurks undercover in ingredients like invert sugar; inulin/chicory root extract; fruit juice concentrates from apple, orange, pear or grape; agave nectar; and fructo-oligosaccharides (FOS). "Low carb" and "reduced sugar" are code words for "sweetened artificially," so be on the lookout for sugar alcohols like xylitol, sorbitol, erythritol or maltitol--these can create bloating and diarrhea. Sucralose, while not technically a FODMAP, can also cause gastrointestinal upset in some, particularly at doses in the 5- to 10-gram range.

DSM and Republic of Tatarstan sign MOU for fortified nutrition

Royal DSM, the global Life Sciences and Materials Sciences company, announces today that it has signed a Memorandum of Understanding (MOU) for a strategic partnership with the Ministry of Health Care of the Republic of Tatarstan with the aim of modernizing the Republic`s public health sector through fortified nutrition. The MOU was signed today in Amsterdam (Netherlands) in the presence of President Vladimir Putin of the Russian Federation and Prime Minister Mark Rutte of the Netherlands.

Under the terms of the MOU, DSM and the Ministry of Health Care of the Republic of Tatarstan will implement a study for the provision of vitamins to patients (children and adults) admitted for treatment to in-patient hospitals to measure the effectiveness of a specially developed vitamin and mineral complex. Following a positive outcome, the objective is to start adding vitamins/minerals when providing in-patient medical care in hospitals in the Republic of Tatarstan.

The strategic partnership between DSM and the Republic of Tatarstan has been developed within the framework of cooperation between the Russian Federation and the Netherlands. The Russian Federation`s Healthy Nutrition strategy for 2020 aims at preserving and strengthening public health and preventing of nutrition related diseases. It has been concluded that based on the current demographic situation in the Russian Federation, a change in nutrition patterns is needed to increase the life expectancy of the Russian population.

Rustam Minnikhanov, President of the Republic of Tatarstan, said: "On behalf of the Republic of Tatarstan I fully support DSM in its efforts to further develop its successful cooperation that started in 2010 in Naberezhnye Chelny with the production of animal nutrition. Full and regular supply of the body with vitamins, minerals and trace elements is one of the key factors in maintaining health. This joint project of DSM, the Institute of Nutrition and the Ministry of Health will enable the introduction of preventive fortification as a standard provision of medical assistance in the hospitals of the Republic."

Leading nutrition organizations issue call to prioritize child nutrition for a healthier, more prosperous Asia

As government, medical, academic and industry representatives gather at the first regional World Health Summit in Singapore, a group of nutrition organizations including global non-government organizations and Royal DSM called for urgent action to ensure adequate nutrition for children in their first 1,000 days of life.

A third of all children in Asia are stunted, or too short for their age - a key indicator of chronic malnutrition. Malnutrition during a child`s critical early years damages their intellectual and physical development, limiting their future economic participation, and increases their vulnerability to non-communicable diseases (NCDs) in adulthood. The World Bank estimates that India, where 48% of children are stunted and over 30% of children are born with a low birth weight, loses approximately 3% of annual GDP due to malnutrition.

The nutrition group, which includes World Vision, Save the Children, the Global Alliance for Improved Nutrition (GAIN), the Essential Micronutrients Foundation and industry partner Royal DSM, called on Summit delegates to commit to nutrition support as a key input to sustainable health and economic development outcomes. It called on governments to promote adequate health and nutrition for women of reproductive age, particularly pregnant and lactating women, to ensure their children have a head-start in good nutritional status. Through public-private partnerships, the private sector can support countries in improving diets by fortifying staples and making vitamin and mineral supplements affordable to the poor.

"The nutritional challenges faced by millions of children across Asia, coupled with increased economic inequality, can only be tackled through strong public-private partnerships. This combination of expertise and experience, with a profound sense of responsibility, are the very best tools we have for ridding the world of malnutrition," said Stephan Tanda, Managing Board Member of Royal DSM, on behalf of the group, adding that it welcomed interest and participation from key stakeholders across both sectors.

Singapore`s successes in maternal and child health can serve as a model for other countries. Since its independence, the country has achieved one of the lowest infant and under-five mortality rates in the world. With its strategic location and regional hub status in Asia, Singapore can play an important role in fostering greater public-private partnerships in the region to improve nutrition in the first 1,000 days.

Malnutrition is associated with poor feeding practices and other lack of access clean water, sanitation, healthcare, social protection and initiatives to empower women. There is compelling evidence connecting maternal nutrition to increased risks in their offspring of developing chronic disease, particularly diabetes and heart disease, later in life. Both undernutrition and overnutrition can have long term adverse effects. Of particular concern is the rapidly rising incidence of gestational diabetes and maternal obesity in Asia, which has major implications for the next generation.
