Elaine Hsiao is a postdoctoral fellow in chemistry and biology at Caltech. She received her undergraduate degree in microbiology, immunology and molecular genetics from UCLA and her doctoral degree in neurobiology from Caltech with Professor Paul Patterson. She studied neuroimmune mechanisms underlying the pathogenesis of neurodevelopmental disorders and uncovered a role for the commensal microbiota in regulating autism-related behaviors, metabolism, and intestinal physiology. Elaine has received several honors, including predoctoral fellowships from the National Institute of Health, Autism Speaks and the Caltech Innovation Program. She is currently studying the mechanisms by which microbes modulate host production of neuroactive molecules and aims to better understand how the human microbiota influences health and disease. In thespirit of ideas worth spreading, TEDx is a program of local, self-organized events that bring people together to share a TED-like experience. Auspicious dishes for wealth and longevity

As dragon and lion dancers usher in the Year of the Water Snake at around three in the afternoon Sunday, Feb 10, families and friends will gather to wish one another wealth, longevity, happiness and prosperity. And as cries of Gong Xi Fa Ca! rend the air, rituals steeped in centuries-old tradition will be observed around the city.

And food is the focal point of these ceremonies marking the start of the Lunar New Year also the onset of the Spring Festival. This celebratory feast of dishes deemed auspicious is shared to invoke blessings of good fortune, longevity, and good health on everyone who partake of it.

At Xin Tian Di, Crown Plaza Manila Gallerias premier Chinese restaurant, Sam Lee, its executive Chinese chef has prepared eight essential auspicious dishes that will be rotated alongside the regular items on the menu until February 24. Among these are the Yu Sheng Salad, Braised African Abalone with Broccoli in Oyster Sauce, Tiger Prawns, Whole Fish, Braised Patatim with Sea Moss, Dried Scallop, Assorted Meat with Rice in Lotus Leaf, Dried Scallop, Dried Oyster, Nian Gao, Steamed Seafood dumpling with Sharks Fin in Superior Stock, Sauteed Prawn Balls with XO Sauce, Deep Fried Crispy Tikoy, and Chocolate Buchi.

A Singaporean Chinese, Chef Lee says that the menu at Xin Tian Di is a fusion of East and West but done in the Chinese way. Every year there is a standard dish in the Chinese New Year menu, the Yu Sheng Salad. Literally meaning raw fish, yusheng sounds like the Chinese word that means an increase in abundance. The Chinese living in Singapore and Malaysia love to eat this during the Chinese New Year because it is a symbol of abundance, prosperity, and good fortune.

Chef Sam LeeThe Yu Sheng Salad is an Asian-style salad with various shredded vegetables and served with assorted toppings, a sweet plum sauce and slices of raw fish (usually salmon sashimi or mackerel). Each ingredient added is carefully chosen because there is a corresponding auspicious greeting with it.

Ingredients of the Yu Sheng salad consists of red items: carrot, red yam and red ginger; green items: cucumber and greem yam; white radish or daikon; pok chui crackers; pomelo; cinnamon powder; Chinese five-spice powder; plim sauce; crushed roasted peanuts; roasted sesame seeds; olive oil; white pepper powder; raw fish slices; and abalone slices.

There is a ritual that accompanies the Yu Sheng Salad, Chef Sam explains. An appetizer to raise good luck for the New Year, the ceremony known as lo hei or tossing the salad, it calls for all diners to gather in a circle and say a Chinese greeting when the salad is put on the table. This is followed by an auspicious greeting for each ingredient. The shredded ingredients are mixed together then diners take their chopsticks and toss the salad into the air while saying out loud their auspicious wishes to signal the start of a prosperous New Year. The higher the ingredients are tossed, the better to have those wishes granted, the chef adds.

Chef Sam says that for the Year of the Water Snake, he has prepared for diners at Xin Tian Di special dishes that will make their celebration meaningful and give them a different culinary adventure. He cites among these the Assorted Meat with Rice in Lotus Leaf. To lovers of Chinese food this is the familiar machang that is a staple is many Chinese and delis but Chef Sam gives it a festive twist. The assorted meats for this dish liver sausage, Chinese sausage, and preserved pork are all ordered from a regular supplier in Hong Kong. This way, we can be sure that the dish is nhas just the right blend of flavors. It is believed that combining these three will bring good luck and the family will stay together through several generations, he says.

Legal loopholes fuel growth of steroid clinics in South Florida

Anthony Boschs clinic, now the focus of a widening steroid investigation, was hidden in plain sight, next to a bank in an office complex on South Dixie Highway across from the University of Miami. Yet it was beyond the reach of state health regulators.

The clinic, BioGenesis of America, fell into a gray area of Florida healthcare law that has allowed many anti-aging or rejuvenation clinics to proliferate across the state with little government oversight.

Exploiting the same legal loopholes that made South Florida the top source of black-market prescription painkillers, these clinics have helped make the region one of the top markets in the United States for illegal steroids and growth hormones feeding potentially dangerous medications not just to athletes and bodybuilders, but also to aging men hoping to fend off Father Time.

How these anti-aging clinics are getting by the law is beyond me, said Dr. Gary Wadler, a New York physician who works with the World Anti-Doping Agency.

Bosch is now under criminal investigation from the U.S. Drug Enforcement Administration over allegations that he supplied steroids and human growth hormones to several Major League Baseball players, including New York Yankees slugger Alex Rodriguez. Boschs ties to the ballplayers were first reported by the Miami New Times, which received copies of what the newspaper says are Boschs handwritten ledgers from his Coral Gables clinic, which opened last March but now sits vacant.

In 2009, the DEA also investigated whether Bosch supplied banned substances to All-Star Manny Ramirez of the Los Angeles Dodgers. No charges were filed. Bosch, 49, could not be reached for comment, and his lawyer did not return messages.

While Boschs name may be familiar to the DEA or baseballs doping investigators, hes an unknown to Florida health regulators.

Bosch is suspected of prescribing and administering medications, yet he is not a doctor or licensed healthcare professional regulated by the states Department of Health. The Health Department does investigate people suspected of prescribing drugs without a license, but the department would not say whether Bosch was the target of an investigation.

Bosch is described as Dr. in papers filed in 2009 for a now-defunct corporation, state records show. He is listed as having a Ph.D. on the BioGenesis Facebook page.

Boschs clinic advertised as a spa on its Facebook page was also unregulated, state health officials said. Most medical clinics in Florida are monitored by the state Agency for Health Care Administration; however, AHCA only inspects clinics that accept insurance and many anti-aging clinics do not take insurance.

Nutrition NGO responds to COI attack: We cannot “continue to exclude business”

The Global Alliance for Improved Nutrition (GAIN) has defended its work with the global food industry, saying it is a vital partner in nutrition-changing efforts in the developing world and does not represent a conflict of interest (COI).

Nutrition at the global level has made little progress for decades and today there is a crisis which cannot be addressed if we continue to exclude business, said GAIN spokesperson, Steve Godfrey.

The debate comes as the World Health Organisation (WHO) stated recently that it wanted to know more about the nature of GAINs food industry links before granting it membership of the World Health Assembly.

Godfrey added with a billion people hungry, 160 million children stunted and 1.4bn people overweight or obese, we need all stakeholders involved if we are going to solve this problem.

It is also important that we have pragmatic and practical approaches in fighting malnutrition, that are based on evidence and results, not preconception. The fact is that the private sector including farmers produce and distribute virtually all the food which poor people consume.

In order to empower poor people to have and make better nutrition choices for their children, it is essential to engage with those who actually produce and distribute foods.

More than 100 graduates traveled from cities across Mexico, South America, the United States, and Europe to participate in the conference and learn from Founder, Director, and Primary Teacher Joshua Rosenthal, MScEd. Rosenthal opened the event with an inspirational speech that emphasized how Spanish-speaking Health Coaches play a crucial role in reversing the global health crisis.

The Hispanic community is widely underserved, and Health Coaches who work with this community by providing information and inspiration are true leaders, Rosenthal says. Our first ever conference in Latin America is a landmark event and truly reflects Integrative Nutritions commitment to empowering its international community and spreading a ripple effect of health and happiness across the globe.

The conference included lectures on strengthening coaching skills and setting goals for a successful health coaching practice. Attendees also received a welcome event, yoga class, and healthy Mexican meals.

The conference was made possible due to the hard work and initiative of four Integrative Nutrition graduates, who coordinated the event: Ana Arizemendi and Georgina Ferrer, both class of 2011, and Gabriela Bambrick-Santoyo and Caren Laboy, both class of 2012.

The energy and enthusiasm of the Mexican Health Coaches was amazing. We are getting organized not only to support each other, but to really create a positive impact in the health of our country. The call to action is clear, and after this conference there is no doubt we will play an important role in the change we want to see in Mexico, Arizemendi says.

Integrative Nutrition trains students in nutrition education, health coaching, and business skills through their signature Health Coach Training Program. The courses innovative online learning platform reaches students all over the globe, empowering them to launch successful health coaching careers in their local communities.

In addition to the conference, Integrative Nutrition has made several recent strides to support the Hispanic community. Rosenthals book, Integrative Nutrition: Feed Your Hunger for Health and Happiness, is now available in Spanish translation. The school also donated $5,000 to Escuela de Parteras Profesionales del Estado de Guerrero, the first professional midwifery school in Mexico that is dedicated to improving nutrition for the most impoverished.
