What #39;s up with that? In the old days, gluten was just a problem for the few people with Celiac Disease. Not anymore. Especially since the introduction of genetically modified grains, there is a huge surge in the number of people who shouldn #39;t eat foods containing gluten. A problem is that traditional lab testing is only looking for Celiac, which is the tip of the iceberg. There are frequently false negatives on the standard tests. This is because there are actually 12 antigens to gluten and gliadin, but the standard tests are only checking for 1. The actual huge iceberg is the group of people who have non-Celiac gluten reactivity. This means that their immune system is reacting to the gluten. They may or may not have digestive symptoms when they eat gluten. They might just have some brain fog, some joint pain, feel tired, or they might feel fine and just have slightly elevated liver enzymes. The fact is that if they have an immune response at all, they need to stop gluten completely and forever. Otherwise, it can lead to liver cancer, dementia, thyroid problems, skin problems like psoriasis or rashes, ADD, joint pains, and predispose to many of the diseases you may have heard of like MS (multiple sclerosis).
