ALEXANDRIA, Va.Three snacking trends are going to influence the future of snacking, according to Gil Horsky, global innovations director for SnackFutures, the innovation and venture hub for Mondelz International. The trends are functional ingredients, sustainability and digitization, reports Food Business News.

You are starting to see ingredients that were maybe more common in the functional space moving into snacks and into food, Horsky said at Fi Europe earlier this week. You are starting to see entrepreneurs from the bio tech and pharma space coming into food.

Functional mushrooms, adaptogens and nootropics are making their way into the snacking category, and Forbes recently pegged these as trends in the plant-based and alternative protein segment as well. SnackFutures released Millie Gram earlier this yeara brand that combines nut butter with powdered mushroom blends, including cordyceps, shiitake, maitake, reishi and lion's mane.

Sustainability in the snacking space can mean how ingredients are grown and sourced, a transparent supply chain and regenerative agriculture.

When it comes to digitalization, the agriculture and food industry remains one of the least-digitized industries, Horsky said. The entire value chain could become digitized, and big data and artificial intelligence could become more prevalent, reports Food Business News.

Mondelz International recently announced its first-ever virtual storeMondelz Lacta, reports Deli Market News. Customers can go through an interactive shopping journey with games and immersive experiences, resulting in significantly longer buying sessions and overall conversion improvements. The store will debut next week.

Mondelz also told Bloomberg that digital sales of cookies and candy are here to stay. E-commerce sales for the company are up by 30% in Asia, the Middle East and Africa, and e-commerce was 20% of total sales in China, aided by partnerships with TikTok and Alibaba, which gave consumers wider online access to its products.

Consumers who were stuck at home became savvier at using e-commerce channels to satisfy their snack cravings, which were a source of comfort as well as a lifeline during the pandemic, said Maurizio Brusadelli, executive vice president and president of Asia Pacific, Middle East and Africa.

Brusadelli says the growth in digital sales will continue even after the pandemic ends because customers are now used to at-home consumption and have shifted toward it. In China, consumers are using e-commerce platforms to shop for biscuits and gum, Indian consumers sought out chocolate and Australians opted for healthier, low-sugar snacks, both online and in stores.

Similarly, Blas Maquivar, president of global emerging markets for Mars Wrigley, sees three trends evolving in the snacking category, including a digital default trend. To be agile and innovative during the pandemic, Mars Wrigley has accelerated the building of digital capabilities across its markets, and it has transformed its portfolio to satisfy the consumer from that digital angle.

Increased snacking by pandemic-weary consumers was well documented in 2020. According to Mondelz Internationals State of Snacking report, released late last year, nearly 90% of adults said they were snacking the same or more than before the outbreak. In c-stores, however, slowed foot trafficas many worked from homedisrupted some of the leading snack categories. Except for candy, all center-store categories lost in-store sales share in 2020 versus 2019, according to NACS State of the Industry data. But c-stores are positioned for recovery. Between 2002 and 2018, the number of adults aged 18-22 in the U.S. who abstained from alcohol increased from 20% to 28% for those in college and from about 24% to 30% for those not in school, say researchers at the University of Michigan and Texas State University. Alcohol abuse among both groups decreased by roughly half according to the same study.

The market is also speaking: non-alcoholic beverage sales increased by 33% to $331 million over the last 52 weeks, according to data conducted by Nielsen. These products have done especially well in e-commerce, as Nielsen found a 315% increase in online non-alcoholic and low-alcoholic beverage dollar sales at the same time.

But when Batchelor originally came up with the idea for Kin, it really came from me wanting to scratch my own itch. I share a lot of the same interests and the same pain points as the modern drinker today. Why are millennials drinking less? Its because theyve been there. Theyve had too much and now they are coming out the gate saying alcohol is kind of gauche and they say they dont want to be drunk, it's lame.

In researching to better understand the younger consumers desire for an alt drink, Batchelor found that what our research really shows is that so many people associate alcohol with poisoning yourself in the more extreme cases and then we have more people who consider themselves mindful drinkers. They dont want to be the drunk person at a party, they dont want to waste their time which is the ultimate currency today. They want to wake up and have full autonomy of their day and not be hungover.

Before developing Kin in 2018, Jen was living the NYC grind, I had a crazy schedule running a business, having a side hustle and I was studying Ayurveda at the same time I started noodling on this. I thought man, why isnt there a smart alternative that makes me feel like Im doing something great for myself? she said.

They were seen as a balm to society, something that helps you connect with the divine, to help you digest your food, says Batchelor.

I wanted to reconnect to what the original intent of these tonics was, she says.

Hadids initial introduction to Kin was as a lover and consumer of it. The drink was placed in her fridge by a friend who knew she loved all things wellness. The universe placed it there, she told Vogue. Especially when you think of her massive modeling career success which often means long workdays, a jet lag-ridden globe-trotting schedule, an incredibly exciting life that also tethers on burnout. Add that on top of her Lyme disease which Hadid has said on social media still leaves her with side effects like brain fog and exhaustion as well as her social anxiety. FRANKFURT, GERMANY Functional ingredients, sustainability and digitization all should influence the future of snacking, said Gil Horsky, global innovations director for SnackFutures, the innovation and venture hub for Mondelez International.

The lines between functional foods, over-the-counter drugs and supplements are blurring, he said Nov. 29 in a virtual fireside chat at Fi Europe, which also is going on in person in Frankfurt.

Functional mushrooms, adaptogens and nootropics are beginning to appear in the snacks category.

There is so much science coming now into the efficacy of the different mushrooms: lions mane, cordyceps, shiitake, miatake, Mr. Horsky said. Each one of them has a different benefit, but they are also very interesting from a flavor perspective, a taste perspective, etc.

SnackFutures has explored the mushroom ingredient category with Millie Gram, a brand of nut-based spreads infused with mushroom blends and other ingredients.

How ingredients are grown and sourced is one element of sustainability, Mr. Horsky said. A transparent supply chain is another. Regenerative agriculture has become more popular as has technology around indoor farming and aqua farming.

The agriculture and food industry remains one of the least-digitized industries, Mr. Horsky said. The entire value chain could become digitized. Big data and artificial intelligence (AI) could become more prevalent.

I think were seeing more and more companies and startups trying to tackle some of those spaces, Mr. Horsky said.

Developing new products within Chicago-based Mondelez is one part of SnackFutures, which also runs the startup engagement platform CoLab and invests in startups. The relationship between a corporation and a startup must include corporate investment, Mr. Horsky said.

If there is not a bit of money and resources, for me that means corporate has not committed, and the poor startup has huge expectations and hopes, he said.

Corporations need to know when to say no, too.

On the corporate side, we see these passionate entrepreneurs, and we feel uncomfortable telling them no, Mr. Horsky said. So we give them kind of a half-baked answer: Thats really interesting. Well be in touch. I always tell my colleagues that is the worst answer we can give the startup because the startup still is hoping that means (the answer) is positive.

Its always better, in a nice, polite way, to say, Listen, we really love what youre doing, but actually this is not relevant for us. Its not our priority.

A high-protein beverage alone probably isnt going to be competitive for consumers, asserted Niki Kennedy, senior marketing manager at Glanbia Nutritionals. They will likely be looking for additional benefits like immune health ingredients or general wellness through micronutrient fortification.

With 15 g of plant-based protein plus nootropics like caffeine, L-theanine and L-tyrosine to support an energy claim, Soylent blurred some category lines with the launch of its Complete Energy.
