The National Restaurant Association says the foodservice industry is forecast to reach $898B in sales in 2022, up from $799 billion in 2021 and even higher than the pre-pandemic sales of $864 billion in 2019. They also report that 51% of adults say they arent eating at restaurants as often as they would like, which is an increase of 6 percentage points from before the pandemic. But pent-up demand for restaurant services remains high.

Restaurant operators have had to pivot from in-house to take-away during the pandemic, then readjust to supply chain problems the following year.

These days, restaurant operators are keeping an eye out for premium ingredients that are practical, popular, available and and can be obtained consistently. So to please the public and their bottom line, restaurant operators are leaning more heavily on sauces, dressings, condiments, spices, and spice blends for their versatility in both food and drinks, according to a 2022 report on menu trends by QSR and FSR magazines, which cover the quick-service and full-service restaurant industries.

Herbs are on the rise.They're easy to get or can be grown in-house and often have a good shelf-life. Some of the herbs to watch for include:

A staple in classic French cuisine, sometimes called French parsley, its in the same family as parsley (Apiaceae.)

This Egyptian condiment is usually a mixture of herbs, nuts, and spices. It is typically used as a dip with bread or as a topping.

Lemon balm has a subtle lemon-mint smell when crushed, it adds a citrus flavor to beverages and salads.

The round leaves and bright flowers of your garden-variety nasturtium are both decorative and edible, adding a peppery taste to salads.

A tropical plant from Southeast Asia with subtly fragrant, flavorful leaves, pandan is used for everything from flavoring water and rice to wrapping cooked meat. It grew 6% on restaurant menus last year, more than 204% over the last four years, according to Datassential.

Burnet adds tartness to sauces, soups, and salads. It tastes somewhat like cucumber.

One of the ingredients of herbes de Provence, savory is used as a seasoning for grilled meats and barbecues, as well as in stews and sauces. It's similar to thyme and can be combined with traditional herbs for a peppery kick.

Distinctively spicy and minty; (its in the mint family) shisho grows well in containers. It is used in Korean, Japanese, Indian and some Chinese cuisine.

Sorrel is popular in parts of Europe and India. It adds an acidic and sour accent to fish, salads, soups and curries.

Some 82% of consumers love or like bacon. Add sweet to the salty-savory, and even 11% of vegetarians and vegans say they love bacon, according to the report.

Hodo Foods

Yuba is made from the layer of cream lifted off heated soy milk, (tofu skin) according to Hodo Foods. The result is a nutrient-dense, nutty-tasting noodle thats a popular plant-based option for soups, salads, and bowls.

Lemonade is the big one in this category. The top three non-alcoholic sips are flavored lemonades--strawberry, raspberry, and watermelon.

In restaurants, CBD can be used in preparing cocktails and beers or desserts by adding a few drops. A National Restaurant Associationreportshows that CBD-infused foods and beverages were trending in 2019. The FDA has notregulated its use in food and beverages, but it's offered in most states.

Datassential reports it has a four-year growth rate of more than 1,523%, but menu penetration is just 1%.

Crab bisque is an easy, accessible menu item, and readily customized.

If candied bacon isnt enough for you, try chili, sriracha, or coffee-flavored bacon. The data says 38% of men and 27% of women are interested in eating flavored bacon, and it can stand alone or garnish any menu item from cocktails to desserts.

Gochujang red chili paste is a savory, sweet and spicy fermented condiment used in Korean cooking. Datassential reported a 20% growth in this seasoning in 2021, following a four-year growth rate of more than 179%.

Original dressings, condiments, and sauces are a low-cost, simple way to add charisma to the plate.

This versatile fruit brings a plant-based, meaty texture to barbecue, rice bowls, tacos, wraps, pizza, stews and salads.

According to NPR, Jackfruit has a distinctive, musky smell, and a flavor that some describe as like Juicy Fruit gum. And they'rehugeweighing from 12 to 100 pounds.

The fast-trending noodle-based soup typically features thick rice noodles, a coconut milk or spicy broth base, and topped with chicken, prawns or fish.

Cannabis for Chronic Pain Linked to Slightly Increased Risk of Arrhythmia – Healthline

People who use medical cannabis products for chronic pain may have a higher risk of heart rhythm disorders, or arrhythmias, according to preliminary results presented August 22 at the European Society of Cardiology scientific meeting in Spain.

This study indicates that there may be a previously unreported risk of arrhythmias following medical cannabis use, study author Dr. Nina Nouhravesh of Gentofte University Hospital in Denmark, said in a news release.

However, she said that even though there was a higher risk of arrhythmia among cannabis users, the absolute risk was modest.

In the study, researchers identified 1.6 million patients in Denmark diagnosed with chronic pain between 2018 and 2021. Over 4,900 of these patients picked up at least one prescription for a cannabis product (dronabinol, cannabidiol or other cannabinoids).

Dronabinol contains high amounts of THC, the main psychoactive compound in cannabis plants. Cannabidiol, or CBD, does not produce the same high as THC. Cannabis plants also contain other cannabinoids which have differing effects.

Researchers matched cannabis patients to similar patients based on age, sex, and the type of chronic pain who did not pick up a prescription for a cannabis product during the study period. They followed both groups for 180 days.

People who didnt use medical cannabis had a small risk (0.49%) of being diagnosed with a new arrhythmia during the follow-up period.

For medical cannabis users, the risk was still small (0.86%), but it was 74% higher than for non-cannabis-users.

However, researchers pointed out that a greater proportion of people in the cannabis group were taking other pain medications such as nonsteroidal anti-inflammatory drugs (NSAIDs), opioids, and anti-epileptic drugs.

As a result, we cannot rule out that this might explain the greater likelihood of arrhythmias [in the cannabis group], Nouhravesh said in the release.

Dr. Nikhil Warrier, a cardiac electrophysiologist and medical director of electrophysiology at MemorialCare Heart & Vascular Institute at Orange Coast Medical Center in Fountain Valley, Calif., said the new study is consistent with other research showing a higher risk of arrhythmias in cannabis users compared to non-users.

One study he pointed to found that young adults with cannabis use disorder had a higher risk of being hospitalized for arrhythmia.

Another study found that cannabis users with existing health problems such as high blood pressure, high lipids or obesity were also at greater risk of arrhythmia-related hospitalization. The highest increase in these hospitalizations occurred among white males ages 45 to 54 years.

In addition, other research has found that young cannabis users with pre-existing depression have a higher risk of arrhythmia compared to cannabis users without depression.

However, Warrier pointed out that the Danish research is an observational study, which inherently has its limits. So one should interpret the results with caution, as it may not imply causality.

Likewise, Dr. Sherry Yafai, a cannabis expert and an emergency medicine physician at Providence Saint Johns Health Center in Santa Monica, Calif., said one of the limitations of the new study is that more people in the cannabis group were taking pain medications or anti-epileptic drugs than in the non-cannabis group.

She pointed to several studies showing that certain opioid pain medications and anti-epileptic drugs can increase the risk of arrhythmia.

As a result, Yafai said it is hard to know if the moderately higher risk of arrhythmias seen in the cannabis group is due to the cannabis products or to other medications that people were taking.

This, she said, also suggests that the two groups of patients were not perfectly matched.

While researchers did match cannabis and non-cannabis patients based on age, sex, and type of chronic pain, other factors may also influence the risk of arrhythmia.

When somebody is taking more opiates, more anti-epileptics, and more NSAIDs, it often indicates that their disease prognosis is worse or their pain levels are much higher, said Yafai.

This raises the following questions, she said: Did the cannabis group have a greater proportion of sicker patients?

If so, would those people have been more likely to develop arrhythmia due to their other health problems, even without cannabis use?

To answer these questions, additional research would be needed, with cannabis and non-cannabis groups matched by medication use, the severity of illness, and other factors.

While many people have used cannabis to find relief from chronic pain, Warrier said people should be aware that cannabis is not without side effects.

I have had patients come to see me who are on cannabis for their chronic pain who dont realize the full impact of this choice, he said. So it is important for them to recognize that this is not a risk-free endeavor.

Yafai said its important for people to know that not all cannabis products are the same; each has different effects, as well as heart-related risks.

Products can contain THC, CBD, or other cannabinoids in varying combinations and amounts. Some products, such as vape pens, may contain higher amounts of THC than is naturally found in cannabis plants.

People who are older or who have underlying factors that increase their risk of arrhythmia should be especially cautious when using cannabis products to treat chronic pain.

Like any medication that is ingested or inhaled, you really should consult with a cannabis specialist to decide if THC or other cannabinoids may be helpful and work best for you, said Yafai.

As a keen observer of popular culture and more pertinently, the myriad superfood trends that emerge from there with alarming ferocity Ive always found the whole appropriation bid both amusing and sad.

Amusing, because we always seem to need such ostensibly new age Western fads to take us back to our intrinsic traditional knowledge. Sad, because of our rather desperate desire to have something weve known all along validated, repackaged and then, ultimately shoved down our gullible throats!

It first happened with yoga by way of the Western boomer generation of the 70s. Now, millennials and Gen Z seem to have a whole other social media-fuelled agenda of their own this time, to reintroduce us to our very own ashwagandhaand haldi doodh.(The latter bearing hip, new names of golden latte and even moon brew, if you may.) But theres another such superfood thats slowly inching forward. Never mind the fact that it has existed in our midst for millennia. 9,000 years, to be precise. And thats hemp. Known to you and me as bhang.

But this is not the same bhangyoure probably thinking about with Holi benders at the forefront. Though both marijuana and hemp are varieties of the cannabis plant, hemp, also known as cannabis sativa, is not an intoxicant. Unlike marijuana, hemp contains low levels of the psychoactive tetrahydrocannabinol (THC) and higher concentrations of cannabidiol (CBD), which mitigates any psychotropic impact.

And this is why in November 2021, the Food Safety and Standards Authority of India (FSSAI) approved the use of hemp seeds in limited quantities in food (5 mg THC per kg) and beverages (0.2 mg THC per kg). This move came about not just to promote a sustainable plant-based diet, but also to highlight the other benefits of consuming hemp.

This is precisely why I have been using both hemp oil and hemp hearts (which is the inside of the seed) to crust fish and lamb for a while now. The hearts have a mild, nutty taste and texture similar to cashewnut. Hemp is also one of the healthiest superfoods we have today, says chef Vicky Ratnani. Ironically, he was first introduced to hemp in the kitchen in Canada years ago while filming his food show there. The latest addition to his Mumbai-based cloud kitchen Speak Burgers menu is a hemp seed and quinoa iteration, that he says will be out soon.

Rich in protein, fibre, and fatty acids, including omega 3, 6 and 9, hemp has several antioxidant effects and may reduce symptoms of numerous ailments, improving the health of the heart, skin joints and even helping mitigate depression and anxiety.

It was finding a cure for her depression by consuming hemp that saw Amruta Shitole start The Hemp Cafeteria in May, along with her brother Vishal in Pune. Every dish on our menu be it our bestselling tawa burger or our chutney and paneer layered sandwich has hemp seeds in it. Even our multigrain breads are baked using a bit of powdered hemp in the dough, says Shitole, who plans on regularly updating her all-vegetarian menu as per demand.

The true proliferation of hemp and its assorted derivatives is best seen among the hardy mountain communities in places such as Himachal Pradesh and Uttarakhand, where it forms an integral part of the local pahadidiet. In fact, till date, Uttarakhand is considered to produce the best quality hemp in the world.

Besides having proven digestive qualities thanks to their high fibre content, whole hemp seeds are also warming in nature. Quite like a vegetarian alternative to fish or cod liver oil. Something that is crucial to maintain body temperature in the cold climate of Uttarakhands mountainous regions such as Garhwal and here in Kumaon, says chef Naveen Adhikari.

A Kumaoni native, Adhikari does a whole menu of traditional hemp-based dishes for guests at the Mary Budden Estate thats part of Binsar Wildlife Sanctuary, overlooking Uttarakhands Jhandi Dhar Hills. These range from the ubiquitous bhang ki chutneyand a hemp heart-flecked raita to a local bhangwala halwathat is the ghee-rich sum of its hemp hearts, semolina, almond flakes and jaggery parts.

We used everything from hemp seed oil, hemp seeds, hemp hearts to hemp powder in the curated dishes, which ranged from an avocado smoothie and a grilled fish to an adobo chicken tortilla and rasmalai bombe dessert. For the bhangira murgh, we ground hemp seeds with other spices into a paste, which was used for flavour, says the hotels executive chef Ashutosh Nerlekar.

Up until a few months ago, there was much to be said about the hemp procurement hurdles faced by those in the business. And not to mention consumer apprehension and scepticism. That has changed.

According to Sarah Nicole Edwards a British expat who runs the entirely plant-based Copper + Cloves caf in Bengaluru it used to be a Herculean task to get her supplies on time. I remember bringing back bags full of edible hemp products with me every time I went back to the U.K., when India always produced the best hemp to begin with, she says. Today, her menu has everything from a hemp seed and cacao smoothie to a chocolate mousse topped with hemp hearts.

Not only has this ancient superfood won hearts overnight, its popularity is spurring enthusiasts to widen its scope and take it to a new demographic.
