Chris Bianco Talks About His New Book, Culinary Empowerment, and Phoenix – Phoenix New Times

It's 10:52 p.m. and Chris Bianco is still working. He's sending emails when most of the country has finished their shifts and are already deep in REM sleep.Bianco has no doubt already spent all day at one of his several restaurants, or maybe even all of them, and an hour short of midnight, he's still at it.Which makes it either all the more remarkable or all the more typical that he's tackled the major project of a cookbook.
"We are the measures of balance," he writes. "Crispy, chewy, thin, thick, spicy how we like things is personal to understanding nuances, and how to get to those places and profiles is the roadmap of a journey." That's the vision for his new book, Bianco: Pizza, Pasta, and Other Foods I Like(Ecco, 2017), which will be released on Tuesday, July 25.
If that sounds like the musings of a man who rarely stops thinking, whose inner narratives are never paused by a comma or period, then you heard right. And his cookbook? It's not really a cookbook. It's more like spending the day with the James Beard-winning, Oprah-hailed, Jimmy Kimmel's fellow fly-fisherman chef who has stopped what he is doing to teach you how to cook something astounding in 15 minutes.
There are recipes for pizza, for meatballs, for focaccia, for Sunday gravy, beets roasted with fig leaves, custard, and lemon cookies. There's also Chris in every recipe; a story, an inspiration, a family tale. The book is more than a book; it's a Chris Bianco omnibus, taking a willing participant through the Candy Land of his restaurants, creations, and motivations.
"I tried my hardest with a limited skill set to one day leave this physical place better than I found it ... maybe just an inch," he says.
The narrative chronicles his career, which started in a small kitchen behind a grocery store in central Phoenix. He then dives into his relationship with sourcing, using the best ingredients possible, and his philosophy that food is a collective experience to be shared, modified, and fit to each individual who tackles a recipe.
"The book is about empowerment of our personal worth as it relates metaphorically through food," he explains. "And it already existed before you turned a page."
The magic potion for his pizza dough has been traversing the internet for about a decade, but those who have tried it knowthat while it's a great recipe, it really can't be replicated unless you have Bianco's oven, his flour, and whatever other magic it takes to make the pizza served at his restaurants. But, combined with entries like gnocchi, lasagna, and risotto, isn't he worried about giving away the store?
"I've always given up recipes or sources, letting transparency, and intention tell the story," he says. "Recipes to me are only notes, to make music is for us to find a genre that fits our person, and to play it with purpose and a whole heart."
And there's no favorite recipe. "I would like to, and do think, that they are all significant in their own way," he says. "Like your kids."
Speaking of kids, paging through Bianco's book, with its very personal narrative and staple recipes from Bianco's close-knit family,it easy to wonder if perhapshe had his children in mind as he compiled the chapters. It reads like a tribute or a legacy, for them and for us.
Bianco writes in his book that it was 30 years ago, when he was just a kid from the Bronx, that he won two free plane tickets to anywhere in the United States. For reasons that are still a mystery to him, Bianco chose Phoenix. Mesmerized by the sky during that first encounter, he returned. He made Phoenix his home and put the city on the culinary map with pizza that was dubbed by many to be the best in the country.
Which begs the question: Whose hometown boy is he? Does he belong to Phoenix, or to the Bronx?
"Finders keepers," he replies. "It's funny about where we are from. You think you know, then you spit in an ancestry.com cup and the dots start to connect. But there is always where you land and end up that has its influence and that gives you your accent. My wife, Mia, goes back three generations here; my kids were born here. Phoenix feels like home to me more than any place I've ever been."
So that settles it. He's ours.
Even at 6:45 a.m., the time stamp on the final email in our conversation.

I hope you all had an amazing, safe and fun Independence Day. How many of you did something on that day to help someone who needed it?
Hopefully all of you did in some way, whether it was taking care of a family member who needed it, helping a down-and-out friend or reaching out to someone in your neighborhood or a perfect stranger who was down on their luck.
And hopefully you also realized how incredible it is to live in a nation where the ability and responsibility to love one another is fundamental to its success.
We are blessed to have our freedom in this nation but we are also blessed to have the responsibility that independence brings with it to love and care for our fellow brothers and sisters.
Thats what the beauty and freedom of America is really about.
As Catholics we can and should be especially eager to do our part to embrace that responsibility. Not only because it will save our nation but also because it so crucial to the nourishment of our souls.
In a society where we are free to become selfishly obsessed with material items, with self aggrandizement, with selfish pursuits, with ego and the like, as Catholics we are called and given a special opportunity to make loving and respecting each other a primary goal. Even though freedom is in our hearts, as we are endowed by our Creator with it, the way we use that freedom in a free society is inexorably connected to the preservation of our nation. If that society is to succeed and continue to be free, then we must take it upon ourselves to live virtuously. Otherwise our society will crumble, and order will be foisted upon us beyond our freedom.
If 80 million Catholics in America heed the admonition of the Galatians quote above, we can be a big part of making sure that never happens. And as our legislators and politicians squabble in what sometimes seems like an endless and fruitless fight to decide the future of America, we especially cannot and should not expect the law of the land alone to save us. And we should not expect any branch of government alone to do so either but instead each one of us should fight for human rights and respect in everything we do.
That doesnt mean that we shouldnt stand up for and promote laws and policies that promote the common good and programs that help the needy and provide support for those that fall between the cracks; it is our Catholic duty to do so. But we cannot and must not delegate our responsibility to the society en masse.
That also doesnt mean that non-Catholics and even non-Christians cant and shouldnt also be protectors of this virtue; but we as Catholics more than most understand not just the duty to love but the blessing we receive because of that relationship between ourselves and those in need.
That relationship was understood best by St. Vincent de Paul and Blessed Frdric Ozanam the founder of the Society of St. Vincent de Paul who described the relationship as not just a humanitarian or philanthropic one but a truly supernatural, spiritual experience in which both the giver and the recipient are transformed, developing in their relationship not just with each other but with God.
Imagine a nation where that transformation was not just allowed but depended upon for its preservation. We are living in that nation! And its one that requires us to feed that need and the blessing that comes from helping others. How incredible is that?
That is the true beauty of America. And hopefully we celebrated that this Fourth of July and will continue to for years to come!
Because then not only will our nation stand as a shining city on a hill, but each one of us will rise in spirit to be our own shining beacons illuminated with the love of Christ.

The Script announce new album Freedom Child and tour: ‘We wanted to revamp and reboot the sound’ – Metro

The Script have announced their first album in three years Freedom Child.
The band debuted their new sound with lead single Rain, a dance track that is a step away from the groups usual singalong tracks.
Speaking exclusively to Metro.co.uk, the band discussed their new direction, the intimate tour, and attempt to reassure fans that despite the change, their music is still the same at heart.
Speaking of the new album, Danny said: Its definitely a progression. I think we have afforded ourselves a little bit of leeway. The past four records have been not the same sound but weve been progressing at a slow rate. We took a year off, we all just chilled out for a while to soak in everything thats going on, musically, culturally, politically, and I think that shows in the music.
He added though that though the change in sound might seem dramatic, its actually not: Im sure to a lot of people it might sound quite drastic at first but if they heard the 60 songs weve put out youd hear a slower progression.
But having had three years since their last release they have to keep up with the changing times.
We have to be reactive, Mark added. We wanted to change our sound a push our sound a bit. Its either adapt, change or die in this industry. Its very difficult in this industry.
We wanted to revamp and reboot the sound and at the end of the day were still the same songwriters and thats never going to go away. We just wanted to do that this time. And over the coming months people are going to think we changed the sound quite a lot, and when they have listened to it and lived with it theyll see werestill the same songwriters and thats never going to go away.

But dont fear, The Script fans, there will be a classic ballad on the album for those who dont like change. Just the one, though.
We kind of only put one on this record that feels very traditional heartbeat Script and we purposely did that because in the past we had a a number of them, Danny said. But theyd all suffer because people couldnt focus on just one. The appetite for music is larger but the attention span is shorter. So we just wanted to put one on this record and its called Arms Open.
The lads have also announced a tour, which includes Londons Brixton O2 Academy.
We want to go back to basics and play smaller, club venues, the band said. [We want to] feel a bit more sweaty, get the band element of who we are. We want to play 2,000 seaters and 4,000 seaters. If we feel the love well come back around. But again we just want to be reactive and do this first.
Freedom Child is out September 1, while the tour kicks off August 21 with tickets going on sale July 28.

After losing an early lead, the Florence Freedom, presented by Titan Mechanical Solutions, recovered to win the rubber game of the series over the Schaumburg Boomers, 6-3, with the help of dominant pitching and timely hitting on Thursday night at Boomers Stadium.
Braulio Torres-Perez (1-0) overcame a three-run first inning to turn in a dominant start for the Freedom (36-21), striking out ten batters over seven innings. Jamal Wilson tossed a perfect eighth inning, and Pete Perez earned the save with a flawless ninth.
Andre Mercurio gave Florence a 2-0 lead in the first inning by knocking a double to right field, scoring Taylor Oldham and Jose Brizuela, both of whom had singled.
But the Boomers (37-19) rallied back in the bottom half, as the first five batters reached base safely. Kyle Ruchim doubled and took third on a Josh Gardiner single, and Zack Weigel was hit by a pitch to load the bases. Torres-Perez then walked David Harris to force home a run, and hit Sean Godfrey with a pitch to bring in the tying run. Cosimo Cannella grounded into a double play next, allowing the go-ahead run to score.
The Freedom, however, immediately fought back against Schaumburg starter Michael Wood (1-1). In the top of the second, Andrew Godbold beat out an infield single and advanced to second on an errant snap throw to first base from catcher James Keller. A groundout allowed Godbold to advance to third, and Daniel Fraga legged out another infield single to tie the score at 3-3. Florence took the lead in the third on a Jordan Brower RBI-double.
Brower delivered another run-scoring double in the fifth, and then scored on a base hit by Godbold. Wood was finished after five innings, surrendering six runs (five earned) on 11 hits.
Mercurio and Brower extended their hitting streaks to eight and seven games, respectively. Brizuela and Austin Wobrock also recorded two hits each in the game.
The Freedom will open a three-game series at home against the Lake Erie Crushers on Friday. Cody Gray (7-2) will start for Florence against Lake Erie right-hander Jordan Kurokawa (3-2), with first pitch scheduled for 7:05 p.m. at UC Health Stadium.

Lyft is now building its own self-driving technology, which is a big deal – The Verge

Lyft believes that by 2021, a majority of its rides will be in autonomous vehicles. But up until recently, it has been reluctant to do any of the expensive work of building and installing the technology necessary to power these self-driving cars. Today, the ride-hail company said it would finally go beyond partnering with other companies on autonomous driving, and in a significant shift, it will start building some of the technology itself.
Its a bold move for a company that, to date, has been content to simply partner with more experienced automakers and tech firms that already have huge head starts in designing the complex technology that powers self-driving cars. Lyft said it was motivated by a desire to stay competitive in the rapidly evolving field of transportation and automation. (The announcement was previewed in Fortune earlier this week.)
Were going to be creating that technology, developing that technology.
Theres an open platform, explained Raj Kapoor, chief strategy officer at Lyft, at a briefing with reporters Wednesday. Someone, like our existing partners like NuTonomy, brings a vehicle with their own system, plugs it in to the Lyft network and theyre moving. What were also doing now is creating the software and hardware to enable a car to be autonomous. Were going to be creating that technology, developing that technology, and then working with partners in the auto industry who are going to be creating the vehicles, bringing the two together, and also putting those on the Lyft network.
While Uber stumbles from one crisis to the next, Lyft has sought to capitalize on its main rivals missteps. The ride-hail company teamed up companies like General Motors, Waymo, NuTonomy, and Jaguar Land Rover. The message was that the automakers would provide the cars, the tech firms would build the sensors and mapping equipment, and Lyft would provide the outlet through which these self-driving cars would be deployed and earn money. Now, perhaps enticed by predictions of a $7 trillion autonomous driving industry, Lyft is saying it wants a build its own technology stack so it can operate its own self-driving cars.
To accomplish this, Lyft is opening a new 90,000-square-foot engineering facility in Palo Alto, California, that its calling the Level 5 center in reference to the most advanced level of autonomous driving. Kapoor said the goal is to have hundreds of engineers working out of the facility by the end of 2018.
Lyft describes the fleet of autonomous vehicles that will be operating on its platform in the near future as a hybrid system that will eventually include hundreds of thousands of cars. Lyft wouldnt put an exact number on it, nor would it say how much money it would be willing to spend. The companys executives reasserted their earlier promise to launch a test pilot with NuTonomys self-driving cars in Boston later this year.

The company was also vague about what components of a self-driving car it would actually be building itself. For example, Luc Vincent, the companys lead engineer who recently came over from Google, wouldnt commit to building his own LIDAR, despite the fact that light detection and ranging sensors are the most common feature on autonomous vehicles operating today.
Were not going into LIDAR building, Vincent said. But well be packaging that in the best possible way for our needs. In other words, well be doing perception the hardware piece as well as the software piece. Early on, Lyfts self-driving cars will be outfitted with off-the-shelf LIDAR because it is convenient, Vincent said, but could be replaced by something more advance in the long term. Thats TBD, he said.
In terms of why, at this relatively late stage in the game, Lyft was jumping into this expensive and potentially fraught new enterprise, Kapoor said the company had very little choice. We believe its inevitable that this is where the world is going, he said. We need to be playing this role. We cant just look at partners to do it, where you dont know what the timelines are, etc.

Unquestionably, Lyft has a lot of catching up to do. Google (now Waymo) has operated self-driving cars for over seven years, racking up hundreds of thousands of miles on public roads and millions more in simulation. Ubers self-driving cars have been on the streets in Pittsburgh since summer 2016, and now has vehicles in California and Arizona, too. The major OEMs like GM, Ford, Volvo, and others all have test vehicles on the roads. Lyft clearly saw its competitors moving rapidly forward and decided it didnt want to get left in the lurch.
What this means for Lyfts various partnerships is more up in the air. The companys executives said they were confident they could develop their own self-driving cars without jeopardizing any of their relationships, but it seems doubtful that all of these partnerships will survive as the competition surrounding autonomous driving heats up.
We reached out to GM, Waymo, NuTonomy, and Jaguar for their reaction to Lyfts news. Waymo and Jaguar did not immediately respond, while GM said it will look into the matter and get back. Karl Iagnemma, CEO of NuTonomy, sent us a statement that said, for now, cooperation was key if self-driving cars were to reach a critical mass on the roads.
The AV ecosystem is constantly evolving and no single winner will be crowned, Iagnemma said. Partnerships remain critical to nuTonomy's success, and our aim is to work with groups with whom we share strategic aims and core values. These are partners that are transparent, innovative, and are focused on putting autonomous fleets on the road. We're excited about the work we're doing with Lyft, and remain focused on executing on our aspect of the partnership.

How technology can help government fight the war on drugs – The Hill (blog)

Earlier this month, the Nashville District Attorney completely retired charges against a man named Christopher Miller who was arrested in May by the citys police for attempting to sell the botanical substance called kratom.
The move brought renewed attention to this naturally occurring product that the Drug Enforcement Agency (DEA) last year proposed classifying as an illegal Schedule I substance a plan which the DEA uncharacteristically withdrew, following a public comment period characterized by opposition from a wide range of constituents.
In a previous blog post about competing interests in the e-cigarette market, I described the so-called Bootlegger and Baptist theory of regulation, a realpolitik analysis of perhaps the single most effective type of issue-driven coalitions.
The common purpose of these two disconnected groups with profoundly divergent motivations who nonetheless shared the same goal, led to the prohibition of alcohol in 1920.
It was arguably the governments appetite for lost revenue from taxes on the sale of booze which eventually fueled a successful constitutional amendment in 1933, overturning what the Bootlegger-Baptist coalition had achieved thirteen years earlier.
With current annual opioid sales of around $11 billion in the U.S., projected to grow to $18 billion by 2021, an epidemic of addictions plagues nearly every demographic group in the country.
The fact that kratom helps many hooked individuals kick the dangerous habit, according to various experts and observers, means it has potentially significant economic impacts for pharmaceutical companies selling opioid painkillers.
Given the major addiction epidemic, clearly not all customers for the pharmaceutical companies products are consuming them for legitimate medical reasons.
On the issue of whether kratom should be criminalized, viewed one way opioid pharmaceutical makers approximate the Bootlegger part of the equation, without implying any nefarious intent or negligence.
Ostensibly, these companies would profit or continue to profit, rather from the DEA making kratom a Schedule I substance, since it purportedly functions as a reverse gateway drug, helping opioid addicts beat their habits.
During the public notice and comment process for the DEAs plan to criminalize kratom, no vocal grassroots constituency emerged in support of the rule no Baptist to match whatever economic interests (Bootleggers) may have favored the plan.
According to Regendus data, an analytics solution that applies Natural Language Processing to rapidly analyze sentiment contained in public comments, the vast majority of more than 24,000 submissions were strongly opposed to the DEAs plan.
As a former federal prosecutor and criminal defense attorney, I was personally familiar with the DEA, whose policies and agents I regularly encountered on one side of a courtroom or the other.
On the defense side in particular, the courtroom is where the DEA normally faces opposition to its policies from certain elements of the public, i.e. the accused.
In the war on drugs, the agencys rules have major, life-changing impacts on individuals, their families and communities.
Many observers of the DEAs proposal to outlaw kratom and the agencys eventual withdrawal in the face of strong public opposition on the issue have noted the rarity of the outcome.
In this case, the public leveraged its legal right to comment and influence a rule-making process, to stop a rule in its tracks before their government acted to make them defendants or criminals.
Instead of a loss in the courtroom, anti-kratom interests inside and outside the DEA lost their case in the rule-making process.

But now some police departments are harnessing new technology to beat these "porch pirates" at their own game. "We're putting bait packages out there and catching the guys who are stealing these packages," said Capt. Gary Berg of the Campbell Police Department in Campbell, California.
TODAY national investigative correspondent Jeff Rossen demonstrated the technology by taking a bait package off a doorstep where it had been planted by Campbell police. He didn't tell them where he was going to drive after taking it.
But thanks to the GPS tracking device the package contained, Rossen didn't have to. Despite taking a circuitous route to a remote park, he was confronted by cops within moments of stopping his car. If Rossen had been a real thief, "you'd be in handcuffs right now," Berg told him.
Other police departments are also starting to use this technology. In the meantime, a good way to avoid becoming a victim of porch pirates is to have packages delivered to your workplace if you can, or to set up delivery for a time you'll be at home.

Micron Technology Inc. in 3 Charts – Motley Fool

Even as the Nasdaq Composite is reaching fresh all-time highs, Micron Technology (NASDAQ:MU) stock's 138% rally over the past 12 months puts the Nasdaq's 25% rise to shame. These numbers certainly don't lie, but they also only tell part of the story when it comes to Micron.
Take a step further back to view the bigger picture, and one sees a company that has experienced both sweeping successes and stinging failures over the years, a point investors enamored by its recent rally must keep in mind. To get a better sense of the company and the forces that drive it, let's examine three charts that sum up Micron Technology and its long-term share price dynamics.

Perhaps the most important thing to understand when looking at Micron is that the DRAM and flash memory chips it sells are effectively commodity products. Market spot prices control what they can charge, which means that Micron's revenue is almost entirely dependent on the current supply-and-demand dynamic for both types of memory chips.
This can lead to the same sort of tremendous top-line fluctuations that are experienced by oil producers or other commodity-based businesses, as you can see from Micron's historical revenue chart.

As you can see, the general direction of Micron's sales has been upward, as technology and computing power have become more integral parts of our everyday lives in recent years.
However, since the year 2000, the company's revenue has experienced four major contractions that, predictably, led to steep losses for Micron shareholders (more on that below). Before turning to its stock price though, we need to look at the rest of Micron's cost structure, which plays an important role in a broader discussion of the giant chipmaker.
As is the case for most companies that lack pricing power, Micron Technology's margin structure shows a tremendous amount of variability. When times are good, the company can produce significant profits. However, when memory chip prices soften -- either due to economic weakness or market-wide supply-and-demand imbalances -- its profits can nosedive deep into the red as the following charts demonstrate.

It's also important to note that Micron's cost structure differs from that ofchipmakers like Qualcomm in that it owns and operates its own semiconductor manufacturing plants. This means Micron's cost structure is more rigid than that of firms that outsource their chip fabrication.
The added fixed costs that come with this strategy make Micron's bottom line more sensitive to revenue changes. Big picture, it's important to note that Micron's lack of pricing power (gross margins) and its more rigid cost structure (net margins) go a long way toward explaining the company's highly cyclical stock price.
Because of the above factors, it should come as no surprise that Micron's stock has also swung wildly over the years. Take a look at the company's historical performance against its benchmark, the Nasdaq Composite.

This nicely captures my cautious take on Micron, particularly for long-term buy-and-hold investors. Micron can generate market-beating returns when investors buy its shares during a pricing rut and hold them until memory prices recover, which is exactly the scenario that has played out with Micron over the past year or so.
Unfortunately, shareholders who have mistimed their investments -- we don't believe in trying to time the market here at The Fool -- have lost their shirts. To be sure, times are flush at Micron right now, and the continued recovery in its business has Wall Street analysts as bullish as ever. However, the company's highly cyclical nature and lack of meaningful pricing power suggest this same scenario will eventually take place.
Ultimately, this isn't an attempt to dissuade investors from buying Micron stock. Rather, it's an earnest warning that owning Micron shares comes with legitimate risks that need to be fully understood prior to investing.

Mariposa County fire containment up, progress slowed – KCRA Sacramento

MARIPOSA COUNTY, Calif. (KCRA)
Firefighters managed to increase containment Friday morning while slowing the progress of the Mariposa County fire, which has destroyed 50 homes and 49 small structures, Cal Fire said.
The wildfire, dubbed the Detwiler Fire, stands at 74,083 acres burned -- up just 4,000 acres from Thursday night -- and containment was up to 15 percent containment, officials said.

About 1,500 structures are still threatened by the fire, which has prompted evacuations for the towns of Mariposa and Coulterville.
In addition to the 50 homes that were destroyed, 11 others have been damaged by the fast-moving blaze.
More than 3,700 fire personnel are working to get a handle of the flames, including crews from up and down California.
The cause of the fire has not been determined.
Firefighters have had to deal with hot and dry conditions and temperatures ranging between 90 and 95 degrees. Winds have been slope-driven throughout the hilly terrain, and the dry area with lots of dead trees hasn't helped the situation.

Power lines supplying power to Yosemite National Park are also threatened by the fire.
